Riba se "ljubi" s maslinovim uljem, postoji čak i stara izreka o tome kako riba pliva tri puta: u moru, u maslinovom ulju pa u vinu. Nije li onda najlogičnije ribu pripremati upravo na maslinovom ulju pa da ona prilikom termičke obrade upije što više njegovog ukusa i blagotvornih sastojaka zbog kojih je na dobru glasu?
Ideja zvuči dobro u teoriji, ali u praksi je mnogi osporavaju, upozoravajući da su visoke temperature problematične za stabilnost maslinovog ulja te da bisno prilikom pečenja i prženja trebaju koristiti ulja stabilna na visokim temperaturama odnosno ulja koja imaju visoke temperaturne točke gorenja. U našim se krajevima u te svrhe najčešće koristi rafinirano suncokretovo ulje koje ima prilično visoku točku gorenja od 246˚C.

Dakle, ništa od friganja na maslinovom ulju, barem ako ćemo uvažiti ova upozorenja, jer nedavno smo naišli na mišljenje prema kojem maslinovo ulje uopće nije problematično za prženje, pod uvjetom da se ne koristi ono "extra vergine", nego sasvim obično, prosječno maslinovo ulje, jer takvo ima nešto višu točku gorenja (više o ovoj temi pročitajte u ovom tekstu).

A što je s pečenjem? Nažalost, po nekim mišljenjima ni to nije dobra ideja, što se objašnjava detaljem da su nezasićene masne kiseline iz maslinovog ulja nestabilne na visokim temperaturama pa u takvim uvjetima može doći do stvaranja štetnih tvari uključujući lipidne perokside i aldehide za koje se pokazalo da imaju karcinogeno djelovanje.
Međutim, ovdje treba zaći malo dublje u problematiku. Naime, maslinovo ulje sadrži 73% jednostruko nezasićenih masnih kiselina, 14 % zasićenih masnih kiselina i 11% višestruko nezasićenih masnih kiselina, a dok su ove zadnje, kojih je ujedno i najmanje, termolabilne, jednostruko nezasićene i zasićene masne kiseline su otporne na visokim temperaturama.

Uz malo matematike dolazimo do postotka od visokih 87% masnih kiselina kojima izlaganje visokim temperaturama neće ili barem ne bi smjelo škoditi, a čak i ako se radi o ekstra djevičanskom maslinovom ulju koje ima nižu točku gorenja, ono u svom sastavu sadrži mnoge aktivne tvari s antioksidativnim djelovanjem poput vitamina E zahvaljujući kojima ostaje stabilno kod pečenja, pa čak i kod prženja.

Riba se "ljubi" s maslinovim uljem, postoji čak i stara izreka o tome kako riba pliva tri puta: u moru, u maslinovom ulju pa u vinu. Nije li onda najlogičnije ribu pripremati upravo na maslinovom ulju pa da ona prilikom termičke obrade upije što više njegovog ukusa i blagotvornih sastojaka zbog kojih je na dobru glasu?
Ideja zvuči dobro u teoriji, ali u praksi je mnogi osporavaju, upozoravajući da su visoke temperature problematične za stabilnost maslinovog ulja te da bisno prilikom pečenja i prženja trebaju koristiti ulja stabilna na visokim temperaturama odnosno ulja koja imaju visoke temperaturne točke gorenja. U našim se krajevima u te svrhe najčešće koristi rafinirano suncokretovo ulje koje ima prilično visoku točku gorenja od 246˚C.

Dakle, ništa od friganja na maslinovom ulju, barem ako ćemo uvažiti ova upozorenja, jer nedavno smo naišli na mišljenje prema kojem maslinovo ulje uopće nije problematično za prženje, pod uvjetom da se ne koristi ono "extra vergine", nego sasvim obično, prosječno maslinovo ulje, jer takvo ima nešto višu točku gorenja (više o ovoj temi pročitajte u ovom tekstu).

A što je s pečenjem? Nažalost, po nekim mišljenjima ni to nije dobra ideja, što se objašnjava detaljem da su nezasićene masne kiseline iz maslinovog ulja nestabilne na visokim temperaturama pa u takvim uvjetima može doći do stvaranja štetnih tvari uključujući lipidne perokside i aldehide za koje se pokazalo da imaju karcinogeno djelovanje.
Međutim, ovdje treba zaći malo dublje u problematiku. Naime, maslinovo ulje sadrži 73% jednostruko nezasićenih masnih kiselina, 14 % zasićenih masnih kiselina i 11% višestruko nezasićenih masnih kiselina, a dok su ove zadnje, kojih je ujedno i najmanje, termolabilne, jednostruko nezasićene i zasićene masne kiseline su otporne na visokim temperaturama.

Uz malo matematike dolazimo do postotka od visokih 87% masnih kiselina kojima izlaganje visokim temperaturama neće ili barem ne bi smjelo škoditi, a čak i ako se radi o ekstra djevičanskom maslinovom ulju koje ima nižu točku gorenja, ono u svom sastavu sadrži mnoge aktivne tvari s antioksidativnim djelovanjem poput vitamina E zahvaljujući kojima ostaje stabilno kod pečenja, pa čak i kod prženja.
I nja kraju, kako postupiti pored svih ovij suprotstavljenih stavova? Mi bismo vam savjetovali: ne pretjerujte s prženjem, dajte prednost pečenju, po mogućnosti sporijem, na nižim temperaturama, a hoćete li pritom koristiti maslinovo ili suncokretovo ulje neka odluči vaš osobni okus.
