Kako se analiziraju maslinova ulja? Kako procijeniti kvalitetu proizvoda i koliko je uopće potrebno vremena da se tako kompleksna analiza provede otkrio nam je Tomislav Filipović, stručni suradnik Dobre hrane.

Podsjetimo kako je Filipović diplomirani inženjer prehrambene tehnologije, koji je danas možda najtraženiji stručnjak za analizu maslina i maslinovih ulja u Hrvatskoj.

On je jedini čovjek u Hrvatskoj koji na posebnom spektrometru ispituje i analizira kvalitetu različitih prehrambenih proizvoda, no jedini je u nas taj uređaj prilagodio i kalibrirao prema strogim parametrima upravo za kontrolu kvalitete maslinova ulja, pa taj segment danas obuhvaća gotovo 80 posto njegova posla.

Štoviše, u suradnji s Ministarstvom poljoprivrede, razvio je i program praćenja optimalne zrelosti ploda masline pa svojim klijentima savjetuje kada brati koju sortu kako bi se od njih dobilo najkvalitetnije ulje u najvećim mogućim količinama.

U video prilogu koji slijedi Filipović nas uvodi u svoj svijet analize pokazujući nam po kojem principu se određuje kvaliteta ulja, koje parametre je potrebno zadovoljiti da biste mogli ulje okarakterizirati kao ekstradjevičansko.

Nakon što ulje stigne u Filipovićev laboratorij potrebno je samo sat vremena da dobije prve parametre.

Kako se analiziraju maslinova ulja? Kako procijeniti kvalitetu proizvoda i koliko je uopće potrebno vremena da se tako kompleksna analiza provede otkrio nam je Tomislav Filipović, stručni suradnik Dobre hrane.

Podsjetimo kako je Filipović diplomirani inženjer prehrambene tehnologije, koji je danas možda najtraženiji stručnjak za analizu maslina i maslinovih ulja u Hrvatskoj.

On je jedini čovjek u Hrvatskoj koji na posebnom spektrometru ispituje i analizira kvalitetu različitih prehrambenih proizvoda, no jedini je u nas taj uređaj prilagodio i kalibrirao prema strogim parametrima upravo za kontrolu kvalitete maslinova ulja, pa taj segment danas obuhvaća gotovo 80 posto njegova posla.

Štoviše, u suradnji s Ministarstvom poljoprivrede, razvio je i program praćenja optimalne zrelosti ploda masline pa svojim klijentima savjetuje kada brati koju sortu kako bi se od njih dobilo najkvalitetnije ulje u najvećim mogućim količinama.

U video prilogu koji slijedi Filipović nas uvodi u svoj svijet analize pokazujući nam po kojem principu se određuje kvaliteta ulja, koje parametre je potrebno zadovoljiti da biste mogli ulje okarakterizirati kao ekstradjevičansko.

Nakon što ulje stigne u Filipovićev laboratorij potrebno je samo sat vremena da dobije prve parametre.

Kako se analiziraju maslinova ulja? Kako procijeniti kvalitetu proizvoda i koliko je uopće potrebno vremena da se tako kompleksna analiza provede otkrio nam je Tomislav Filipović, stručni suradnik Dobre hrane.

Podsjetimo kako je Filipović diplomirani inženjer prehrambene tehnologije, koji je danas možda najtraženiji stručnjak za analizu maslina i maslinovih ulja u Hrvatskoj.

On je jedini čovjek u Hrvatskoj koji na posebnom spektrometru ispituje i analizira kvalitetu različitih prehrambenih proizvoda, no jedini je u nas taj uređaj prilagodio i kalibrirao prema strogim parametrima upravo za kontrolu kvalitete maslinova ulja, pa taj segment danas obuhvaća gotovo 80 posto njegova posla.

Štoviše, u suradnji s Ministarstvom poljoprivrede, razvio je i program praćenja optimalne zrelosti ploda masline pa svojim klijentima savjetuje kada brati koju sortu kako bi se od njih dobilo najkvalitetnije ulje u najvećim mogućim količinama.

U video prilogu koji slijedi Filipović nas uvodi u svoj svijet analize pokazujući nam po kojem principu se određuje kvaliteta ulja, koje parametre je potrebno zadovoljiti da biste mogli ulje okarakterizirati kao ekstradjevičansko.

Nakon što ulje stigne u Filipovićev laboratorij potrebno je samo sat vremena da dobije prve parametre.
