Jedna od takvih zona je Sardinija, čiji se stanovnici drže mediteranske prehrane, ali uz neke posebnosti, a jedna od tih posebnosti vezana je uz doručak i uključuje odabir juhe od povrća umjesro u drugim krajevima uobičajenih opcija za prvi obrok u danu.

Što se tiče odabira mahunarki, osobito je popularan bob, koji je pun proteina i sadrži sastojke koji potiču aktivnost antioksidanata koji se bore protiv oštećenja koja uzrokuju starenje te vitamina B skupine koji podižu imunitet, ali i dobro raspoloženje.

Sardinijska juha od povrća
Sastojci:
100 g boba
100 g rajčica
75 g slanutka
50 g fregule ili kus-kusa
1 luk
1 mrkva
1 češanj češnjaka
1/2 stabljike celera
1/4 gomolja komorača
2 žlice maslinovog ulja
peršin
bosiljak
naribani Parmigiano Regiano
sol, papar
Priprema:
Namočite bob i slanutak u velikoj zdjeli vode najmanje 8 sati pa ih isperite i napola skuhajte ili koristite konzervirane, odnosno zamrznute mahunarke
Zagrijte 2 žlice maslinovog ulja, dodajte nasjeckani luk, mrkvu i celer i pirjajte ih dok ne omekšaju. Dodajte češnjak i pirjajte oko 20 sekundi.
Umiješajte rajčice, komorač, peršin i bosiljak, kao i ocijeđeni bob i slanutak. Dodajte oko 700 ml vode, pojačajte vatru i zakuhajte pa smanjite vatru i pirjajte polako, bez poklopca, dok slanutak i bob ne omekšaju, dodajući još vode ako je potrebno ako smjesa postane pregusta.
Umiješajte tjesteninu, posolite i popaprite. Dodajte oko 300 ml i kuhajte dok tjestenina ne omekša, oko 10 minuta.
Poslužite posuto sirom.

Možemo li promjenom prehrane popraviti zdravlje, podiči vitalnost i postići dugovječnost? Odgovor je potvrdan, a utemeljen je na brojnim istraživanjima, među kojima je i proučavanje prehrambenih nvika ljudi u takozvanim plavim zonama, područjima u kojima žive najdugovječniji ljudi na svijetu.
Jedna od takvih zona je Sardinija, čiji se stanovnici drže mediteranske prehrane, ali uz neke posebnosti, a jedna od tih posebnosti vezana je uz doručak i uključuje odabir juhe od povrća umjesro u drugim krajevima uobičajenih opcija za prvi obrok u danu.

Može se napraviti od bilo koje kombinacije sezonskog povrća, ali uvijek uključuje različite vrste mahunarki fregulu, prepečenu tjesteninu od durum pšenice koja je jako popularna na Sardiniji.
Što se tiče odabira mahunarki, osobito je popularan bob, koji je pun proteina i sadrži sastojke koji potiču aktivnost antioksidanata koji se bore protiv oštećenja koja uzrokuju starenje te vitamina B skupine koji podižu imunitet, ali i dobro raspoloženje.

Sardinijska juha od povrća
Sastojci:
100 g boba
100 g rajčica
75 g slanutka
50 g fregule ili kus-kusa
1 luk
1 mrkva
1 češanj češnjaka
1/2 stabljike celera
1/4 gomolja komorača
2 žlice maslinovog ulja
peršin
bosiljak
naribani Parmigiano Regiano
sol, papar
Priprema:
Namočite bob i slanutak u velikoj zdjeli vode najmanje 8 sati pa ih isperite i napola skuhajte ili koristite konzervirane, odnosno zamrznute mahunarke
Zagrijte 2 žlice maslinovog ulja, dodajte nasjeckani luk, mrkvu i celer i pirjajte ih dok ne omekšaju. Dodajte češnjak i pirjajte oko 20 sekundi.
Umiješajte rajčice, komorač, peršin i bosiljak, kao i ocijeđeni bob i slanutak. Dodajte oko 700 ml vode, pojačajte vatru i zakuhajte pa smanjite vatru i pirjajte polako, bez poklopca, dok slanutak i bob ne omekšaju, dodajući još vode ako je potrebno ako smjesa postane pregusta.
Umiješajte tjesteninu, posolite i popaprite. Dodajte oko 300 ml i kuhajte dok tjestenina ne omekša, oko 10 minuta.
Poslužite posuto sirom.
