Tko voli friške srdele, trebao bi obratiti pažnju na to da polovicom prosinca počinje lovostaj na tu vrijednu stanovnicu Jadrana i da će ta zabrana potrajati sve do proljeća. Dakle, trk na Peškariju, upravo su je puni banci. Ako ste danas zakasnili, bit će više sreće sutra, ali nakon toga vam nećemo baš garantirati, jer najavljuju grubo vrijeme.
Ako pak niste ljubitelj srdele, morali biste to postati jer naša hraniteljica, kako joj mnogi tepaju nije samo ekonomična i ukusna već je i prava riznica zdravih sastojaka pa je blagotvorna za zdravlje kostiju, živaca i krvožilnog sustava, a nedavna studija s Harvarda pokazala je da konzumacija samo jedne do dvije porcije te plave ribe tjedno osigurava dovoljno omega-3 masnih kiselina da se izgledi za razvoj bolesti srca smanji za više od jedne trećine.
Ali nećemo sad o tim stvarima, samo ćemo o uživanciji. A ona je sa srdelama, ako znate koji dobar recept, zajamčena. Mi ih znamo par pa vam ih nudimo za isprobavanje sve do lovostaja.

Tjestenina sa šalšom od srdela
Sastojci:
500 g srdela
250 g pelata
100 ml bijelog vina
2 režnja češnjaka
1/2 luka
peršin
maslinovo ulje
skuhana tjestenina
sol
Priprema:
Srdele očistite, ispržite pa im uklonite kosti.
Na maslinovom ulju pirjajte sitno nasjeckan luk, kad postane staklast dodajte usitnjeni češnjak, a kad češnjak zamiriše dodajte pelate i sjeckani peršin. Kratko pirjajte uz miješanje pa dolijte vino i još maslinovog ulja pa dobro promiješajte da se sve spoji. U umak dodajte srdele i pustite da se kuha sve skupa još 15 do 20 minuta.
U međuvremenu skuhajte tjesteninu, procijedite je i pomiješajte sa šalšom.
Srdele na brujet
Sastojci:
1 kg srdela
200 ml bijelog vina
4 režnja češnjaka
2 luka
1 žlica koncentrata rajčice
peršin
maslinovo ulje
riblji temeljac ili voda
sol, papar
Priprema:
Na zagrijanom ulju prepržite sitno sjeckani luk. Kad postane staklast dodajte mu češnjak. Pirjajte dok ne zamiriše pa dodajte koncentrat rajčice i pirjajte uz miješanje otprilike minutu, zatim zalijte vinom. Miješajte, a kad alkohol ispari dodajte riblji temeljac ili toplu vodu. Dobro promiješajte pa dodajte sol, papar i peršin te kuhajte par minuta. Dodajte očišćene srdele i kuhajte još 5-6 minuta odnosno 8-10 ako su srdele velike.

Srdele iz pećnice
Sastojci:
1 kg srdela
maslinovo ulje
češnjak
peršin
sol
Priprema:
Očistite srdele, obrišite ih pa ih nabodite na štapiće ražnjiće. Tako pripremljene srdele posložite na lim za pečenje prekriven papirom za pečenje, premažite ih ili poškropite maslinovim uljem pa ih stavite na najviši položaj u pećnicu zagrijanu na 200 stupnjeva uz opciju grill.
Pecite ih 5-8 minuta, ovisno o veličini srdela i jačini pećnice. Zatim ih okrenite, pospite ih nasjeckanim češnjakom i peršinom i pecite još 3-4 minute. Posolite ih i odmah poslužite.
Polpete od srdela
Sastojci:
500 g srdela
1 luk
1 jaje
krušne mrvice
sol, papar
ulje
Priprema:
Očistite srdele, uklonite im drače pa meso usitnite. Pomiješajte srdele s usitnjenim lukom, dodajte jaje, sol i onoliko krušnih mrvica koliko je potrebno da možete oblikovati polpete. Ako želite, oblikovane polpete možete dodatno uvaljati u krušne mrvice.
Polpete pržite u zagrijanom ulju ili ih poredajte u posudu za pečenje obloženu papirom za pečenje, poškropite ih uljem pa ih stavite peći u pećnicu zagrijanu na 200 stupnjeva Celzija pa ih pecite 12-15 minuta te potom okrenite i pecite još 5-8 minuta, odnosno dok ne dobiju hrskavu koricu.

Tko voli friške srdele, trebao bi obratiti pažnju na to da polovicom prosinca počinje lovostaj na tu vrijednu stanovnicu Jadrana i da će ta zabrana potrajati sve do proljeća. Dakle, trk na Peškariju, upravo su je puni banci. Ako ste danas zakasnili, bit će više sreće sutra, ali nakon toga vam nećemo baš garantirati, jer najavljuju grubo vrijeme.
Ako pak niste ljubitelj srdele, morali biste to postati jer naša hraniteljica, kako joj mnogi tepaju nije samo ekonomična i ukusna već je i prava riznica zdravih sastojaka pa je blagotvorna za zdravlje kostiju, živaca i krvožilnog sustava, a nedavna studija s Harvarda pokazala je da konzumacija samo jedne do dvije porcije te plave ribe tjedno osigurava dovoljno omega-3 masnih kiselina da se izgledi za razvoj bolesti srca smanji za više od jedne trećine.
Ali nećemo sad o tim stvarima, samo ćemo o uživanciji. A ona je sa srdelama, ako znate koji dobar recept, zajamčena. Mi ih znamo par pa vam ih nudimo za isprobavanje sve do lovostaja.

Tjestenina sa šalšom od srdela
Sastojci:
500 g srdela
250 g pelata
100 ml bijelog vina
2 režnja češnjaka
1/2 luka
peršin
maslinovo ulje
skuhana tjestenina
sol
Priprema:
Srdele očistite, ispržite pa im uklonite kosti.
Na maslinovom ulju pirjajte sitno nasjeckan luk, kad postane staklast dodajte usitnjeni češnjak, a kad češnjak zamiriše dodajte pelate i sjeckani peršin. Kratko pirjajte uz miješanje pa dolijte vino i još maslinovog ulja pa dobro promiješajte da se sve spoji. U umak dodajte srdele i pustite da se kuha sve skupa još 15 do 20 minuta.
U međuvremenu skuhajte tjesteninu, procijedite je i pomiješajte sa šalšom.
Srdele na brujet
Sastojci:
1 kg srdela
200 ml bijelog vina
4 režnja češnjaka
2 luka
1 žlica koncentrata rajčice
peršin
maslinovo ulje
riblji temeljac ili voda
sol, papar
Priprema:
Na zagrijanom ulju prepržite sitno sjeckani luk. Kad postane staklast dodajte mu češnjak. Pirjajte dok ne zamiriše pa dodajte koncentrat rajčice i pirjajte uz miješanje otprilike minutu, zatim zalijte vinom. Miješajte, a kad alkohol ispari dodajte riblji temeljac ili toplu vodu. Dobro promiješajte pa dodajte sol, papar i peršin te kuhajte par minuta. Dodajte očišćene srdele i kuhajte još 5-6 minuta odnosno 8-10 ako su srdele velike.

Srdele iz pećnice
Sastojci:
1 kg srdela
maslinovo ulje
češnjak
peršin
sol
Priprema:
Očistite srdele, obrišite ih pa ih nabodite na štapiće ražnjiće. Tako pripremljene srdele posložite na lim za pečenje prekriven papirom za pečenje, premažite ih ili poškropite maslinovim uljem pa ih stavite na najviši položaj u pećnicu zagrijanu na 200 stupnjeva uz opciju grill.
Pecite ih 5-8 minuta, ovisno o veličini srdela i jačini pećnice. Zatim ih okrenite, pospite ih nasjeckanim češnjakom i peršinom i pecite još 3-4 minute. Posolite ih i odmah poslužite.
Polpete od srdela
Sastojci:
500 g srdela
1 luk
1 jaje
krušne mrvice
sol, papar
ulje
Priprema:
Očistite srdele, uklonite im drače pa meso usitnite. Pomiješajte srdele s usitnjenim lukom, dodajte jaje, sol i onoliko krušnih mrvica koliko je potrebno da možete oblikovati polpete. Ako želite, oblikovane polpete možete dodatno uvaljati u krušne mrvice.
Polpete pržite u zagrijanom ulju ili ih poredajte u posudu za pečenje obloženu papirom za pečenje, poškropite ih uljem pa ih stavite peći u pećnicu zagrijanu na 200 stupnjeva Celzija pa ih pecite 12-15 minuta te potom okrenite i pecite još 5-8 minuta, odnosno dok ne dobiju hrskavu koricu.
