Kulinarski i nutricionistički trendovi sve nas češće potiču da zasićene masnoće, poput maslaca, zamijenimo nezasićenima, poput maslinovog ulja. U skladu s tim, sve je više recepata koji umjesto maslaca spominju maslinovo ulje, i dok nam je to već pomalo postalo uobičajeno kad je riječ o slanim jelima, još uvijek nam može zvučiti malo neobično kad su u pitanju slastice. Doduše, neki kolači i peciva izvorno podrazumijevaju maslinovo ulje, no kad poželimo u nekom slatkom receptu koji izričito navodi maslac provesti spomenutu zamjenu, skepsa je sasvim razumljiva. Hoće li okus maslinovog ulja predvladati? Hoće li se tijesto ponašati kao i inače? Kako će sve to u konačnici izgledati...?

Najprije spomenimo da ova zamjena ima više posljedica od promjene nutritivne vrijednosti: dobro maslinovo ulje dodaje prekrasan, nijansiran okus pečenim proizvodima i održava ih vlažnima te također doprinosi posebnoj, teksturiranoj korici. Sukladno navedenom, maslinovo je ulje izvrsna opcija kad je riječ o pecivima. A što kad se radi o kolačima, primjerice keksima? Kako izgledaju keksi s maslinovim uljem - prije pečenja i nakon njega - možete se uvjeriti u priloženom videu.

Sasvim dobro, zar ne?

Sad smo vas vjerojatno već nagovorili. Ipak, prilikom ove zamjene trebali bismo se držati određenih pravila. Prvo od njih tiče se količine. Kao opće pravilo, tri četvrtine maslaca u receptu zamijenite maslinovim uljem. Drugim riječima: ako recept za pečenje zahtijeva 8 žlica maslaca, upotrijebite 6 žlica maslinovog ulja, odnosno, ako količinu mjerite u mililitrima i gramima, smanjite količinu za 20 posto.

Drugo se pravilo tiče vrste i kvalitete ulja. Birajte najkvalitetnije moguće, no klonite se ulja jako izraženog okusa. Najbolje je koristiti ulje čiji vam se okus i inače sviđa na namirnicama neutralnog okusa poput salate ili lešo povrća ili pak ciljati na ulje od sorti maslina koje daju uljr blagog okusa, poput leccina.

Treće se pravilo tiče izbora slastice na kojoj ćete primijeniti zamjenu. Prilikom odabira imajte na umu da konverzija će utjecati na teksturu pa očekujte slasticu koja je manje prozračna i više se mrvi (jer maslinovo ulje inhibira gluten), ali je sočnija.

Kulinarski i nutricionistički trendovi sve nas češće potiču da zasićene masnoće, poput maslaca, zamijenimo nezasićenima, poput maslinovog ulja. U skladu s tim, sve je više recepata koji umjesto maslaca spominju maslinovo ulje, i dok nam je to već pomalo postalo uobičajeno kad je riječ o slanim jelima, još uvijek nam može zvučiti malo neobično kad su u pitanju slastice. Doduše, neki kolači i peciva izvorno podrazumijevaju maslinovo ulje, no kad poželimo u nekom slatkom receptu koji izričito navodi maslac provesti spomenutu zamjenu, skepsa je sasvim razumljiva. Hoće li okus maslinovog ulja predvladati? Hoće li se tijesto ponašati kao i inače? Kako će sve to u konačnici izgledati...?

Najprije spomenimo da ova zamjena ima više posljedica od promjene nutritivne vrijednosti: dobro maslinovo ulje dodaje prekrasan, nijansiran okus pečenim proizvodima i održava ih vlažnima te također doprinosi posebnoj, teksturiranoj korici. Sukladno navedenom, maslinovo je ulje izvrsna opcija kad je riječ o pecivima. Sasvim dobro, zar ne?

Sad smo vas vjerojatno već nagovorili. Ipak, prilikom ove zamjene trebali bismo se držati određenih pravila. Prvo od njih tiče se količine. Kao opće pravilo, tri četvrtine maslaca u receptu zamijenite maslinovim uljem. Drugim riječima: ako recept za pečenje zahtijeva 8 žlica maslaca, upotrijebite 6 žlica maslinovog ulja, odnosno, ako količinu mjerite u mililitrima i gramima, smanjite količinu za 20 posto.

Drugo se pravilo tiče vrste i kvalitete ulja. Birajte najkvalitetnije moguće, no klonite se ulja jako izraženog okusa. Najbolje je koristiti ulje čiji vam se okus i inače sviđa na namirnicama neutralnog okusa poput salate ili lešo povrća ili pak ciljati na ulje od sorti maslina koje daju uljr blagog okusa, poput leccina.

Treće se pravilo tiče izbora slastice na kojoj ćete primijeniti zamjenu. Prilikom odabira imajte na umu da konverzija će utjecati na teksturu pa očekujte slasticu koja je manje prozračna i više se mrvi (jer maslinovo ulje inhibira gluten), ali je sočnija.

Kulinarski i nutricionistički trendovi sve nas češće potiču da zasićene masnoće, poput maslaca, zamijenimo nezasićenima, poput maslinovog ulja. U skladu s tim, sve je više recepata koji umjesto maslaca spominju maslinovo ulje, i dok nam je to već pomalo postalo uobičajeno kad je riječ o slanim jelima, još uvijek nam može zvučiti malo neobično kad su u pitanju slastice. Doduše, neki kolači i peciva izvorno podrazumijevaju maslinovo ulje, no kad poželimo u nekom slatkom receptu koji izričito navodi maslac provesti spomenutu zamjenu, skepsa je sasvim razumljiva. Hoće li okus maslinovog ulja predvladati? Hoće li se tijesto ponašati kao i inače? Kako će sve to u konačnici izgledati...?

Najprije spomenimo da ova zamjena ima više posljedica od promjene nutritivne vrije...
