Krem sir je zdrava, hranjiva i praktična namirnica koju je uvijek dobro imati pri ruci jer ju možemo koristiti u bezbrojnim slatkim i slanim receptima. Ili jednostavno namazati na kruh. Ali ima jednu manu: nije baš jeftin. Pakiranje od 100 grama i to nekog "žnj" brenda, na akciji, košta barem euro, što je još podnošljivo ako vam je potreban samo za sendviče, ali ako vam treba pola kilograma za cheesecake, e pa onda iznos koji plaćate za njega baš i nije mačji kašalj. S druge strane, litra mlijeka košta manje-više jednako kao 100 grama krem sira pa se nije neobično zapitati koliko bi se krem sira moglo napraviti od te litre mlijeka..

E pa sad možete provjeriti, jer od mlijeka ćete, vrlo lako, dobiti krem sir - sve što vam treba su limun i malo soli. Jasno, mlijeko iz tetrapaka je obrano pa ne sadrži baš primamljivu količinu mliječne masti, pa ako želite kremastiji i bogatiji sir, morate dodati "zeru" masnoće, no o tome u nastavku. Jednako tako, sir s manje masti možda će vam baš savršeno odgovarati jer ste na dijeti ili iz zdravstvenih razloga izbjegavate masnoće. Dakle, izbor je na vama.

Pri izboru mlijeka pripazite da nije ultrahomogenizirano (UHT) jer se takvo ponekad nepredviđeno ponaša prilikom sirenja. Pasterizirano će biti sasvim u redu, no ako želite baš pravu stvar, potrudite se nabaviti sirovo.

Prije nego se bacite na proizvodnju sira u kućnoj djelatnosti, osigurajte lonac, cjedilo, muslinsku krpu (poslužit će i gaza presložena u više slojeva) i posudica u koju ćete pohraniti sir. Pored mlijeka, limuna i soli možda ćete trebati i začine poput češnjaka u granulama, dimljene paprike i sušenog aromatičnog bilja - i taj je izbor na vama, mi vam predlažemo osnovni recept.

Vratimo se sad na masnoću. Svakako odaberite mlijeko sa što više mliječne masti, osim ako, kako je spomenuto, želite što laganiji sir. Ako vam treba kremasti sir kakav se koristi u cheesecakeu, poslužite se mješavinom mlijeka i slatkog vrhnja. Masnoću, također, možete dodati u obliku maslinovog ili kokosovog ulja, ako vam je tako draže.

Za palačinke i izradu namaza punomasno ili četvrtmasno mlijeko bit će vam sasvim dovoljno, a što se tiče drugih ideja za korištenje sira dobivenog na ovaj način evo ih još nekoliko: dodajte ga tjestenini, rižotu, umacima i juhama kao i svakovrsnim slanim pitama za slanu varijantu ili ga umiješajte u kreme i ukrasne glazure ili iskorostite kao nadjev za peciva za slatku.

Krem sir od mlijeka

Sastojci:

2 l punomasnog mlijeka 
1 limun
0,5 žličice soli
dodaci za bolji okus (opcionalno)

Priprema:

Zavrijte mlijeko u loncu. Čim prokuha dodajte limunov sok i zatim ugasite vatru.

Ostavite da odstoji nekoliko minuta dok se ne zgruša.

Kad primijetite nakupine sira koje plivaju u žućkastoj tekućini, sve skupa procijedite kroz sito obloženo muslinom ili gazom. Tekućinu sačuvajte, možete je kasnije iskoristiti (vidi napomenu gore).

Sir malo isperite hladnom vodom, da se riješite viška sirutke, a zatim ga snažno stisnite u gazi kojom je obloženo cjedilo kako bi izašlo što više tekućine.

Tako dobivenu skutu ubacite u blender, dodajte joj sol i blendajte dok ne postane glatka. Sad možete umiješati i začine, ako ih koristite, a također možete dodati malo ulja po izboru i još malo blendati dok se sve ne poveže.

Prebacite sir u posude koje se hermetički zatvaraju i potrošite kroz tjedan dana.

Krem sir je zdrava, hranjiva i praktična namirnica koju je uvijek dobro imati pri ruci jer ju možemo koristiti u bezbrojnim slatkim i slanim receptima. Ili jednostavno namazati na kruh. Ali ima jednu manu: nije baš jeftin. Pakiranje od 100 grama i to nekog "žnj" brenda, na akciji, košta barem euro, što je još podnošljivo ako vam je potreban samo za sendviče, ali ako vam treba pola kilograma za cheesecake, e pa onda iznos koji plaćate za njega baš i nije mačji kašalj. S druge strane, litra mlijeka košta manje-više jednako kao 100 grama krem sira pa se nije neobično zapitati koliko bi se krem sira moglo napraviti od te litre mlijeka..

E pa sad možete provjeriti, jer od mlijeka ćete, vrlo lako, dobiti krem sir - sve što vam treba su limun i malo soli. Jasno, mlijeko iz tetrapaka je obrano pa ne sadrži baš primamljivu količinu mliječne masti, pa ako želite kremastiji i bogatiji sir, morate dodati "zeru" masnoće, no o tome u nastavku. Jednako tako, sir s manje masti možda će vam baš savršeno odgovarati jer ste na dijeti ili iz zdravstvenih razloga izbjegavate masnoće. Dakle, izbor je na vama.

Pri izboru mlijeka pripazite da nije ultrahomogenizirano (UHT) jer se takvo ponekad nepredviđeno ponaša prilikom sirenja. Pasterizirano će biti sasvim u redu, no ako želite baš pravu stvar, potrudite se nabaviti sirovo.

Prije nego se bacite na proizvodnju sira u kućnoj djelatnosti, osigurajte lonac, cjedilo, muslinsku krpu (poslužit će i gaza presložena u više slojeva) i posudica u koju ćete pohraniti sir. Pored mlijeka, limuna i soli možda ćete trebati i začine poput češnjaka u granulama, dimljene paprike i sušenog aromatičnog bilja - i taj je izbor na vama, mi vam predlažemo osnovni recept.

Vratimo se sad na masnoću. Svakako odaberite mlijeko sa što više mliječne masti, osim ako, kako je spomenuto, želite što laganiji sir. Ako vam treba kremasti sir kakav se koristi u cheesecakeu, poslužite se mješavinom mlijeka i slatkog vrhnja. Masnoću, također, možete dodati u obliku maslinovog ili kokosovog ulja, ako vam je tako draže.

Za palačinke i izradu namaza punomasno ili četvrtmasno mlijeko bit će vam sasvim dovoljno, a što se tiče drugih ideja za korištenje sira dobivenog na ovaj način evo ih još nekoliko: dodajte ga tjestenini, rižotu, umacima i juhama kao i svakovrsnim slanim pitama za slanu varijantu ili ga umiješajte u kreme i ukrasne glazure ili iskorostite kao nadjev za peciva za slatku.

Krem sir od mlijeka

Sastojci:

2 l punomasnog mlijeka 
1 limun
0,5 žličice soli
dodaci za bolji okus (opcionalno)

Priprema:

Zavrijte mlijeko u loncu. Čim prokuha dodajte limunov sok i zatim ugasite vatru.

Ostavite da odstoji nekoliko minuta dok se ne zgruša.

Kad primijetite nakupine sira koje plivaju u žućkastoj tekućini, sve skupa procijedite kroz sito obloženo muslinom ili gazom. Tekućinu sačuvajte, možete je kasnije iskoristiti (vidi napomenu gore).

Sir malo isperite hladnom vodom, da se riješite viška sirutke, a zatim ga snažno stisnite u gazi kojom je obloženo cjedilo kako bi izašlo što više tekućine.

Tako dobivenu skutu ubacite u blender, dodajte joj sol i blendajte dok ne postane glatka. Sad možete umiješati i začine, ako ih koristite, a također možete dodati malo ulja po izboru i još malo blendati dok se sve ne poveže.

Prebacite sir u posude koje se hermetički zatvaraju i potrošite kroz tjedan dana.

Krem sir je zdrava, hranjiva i praktična namirnica koju je uvijek dobro imati pri ruci jer ju možemo koristiti u bezbrojnim slatkim i slanim receptima. Ili jednostavno namazati na kruh. Ali ima jednu manu: nije baš jeftin. Pakiranje od 100 grama i to nekog "žnj" brenda, na akciji, košta barem euro, što je još podnošljivo ako vam je potreban samo za sendviče, ali ako vam treba pola kilograma za cheesecake, e pa onda iznos koji plaćate za njega baš i nije mačji kašalj.
