Ako mislite da je baklava jedini grčki kolač (samo malo, ne tvrdimo mi da je njihova, o tome se već dugo spore s Turcima), ne znate što propuštate jer gastronomska baština te zemlje vrlo je bogata po pitanju slatkoga. Jedan od najpopularnijih deserta u Grčkoj je vjerovali ili ne, burek - ali ne burek na kakav ste navikli, naravno.
Grčki galaktoboureko zapravo je pita s tankim korama i s nadjevom na bazi mlijeka, čemu duguje ime, a nakon što je ispečena, slastica se prelijeva aromatičnim sirupom s puno finih začina i korice citrusa - najčešće limuna, no neki više vole staviti naranču.
Sve skupa se stapa u slasticu kremastog nadjeva, hrskavih kora i bogatog okusa koji nećete zaboraviti.

Galaktobureko
Sastojci:
400 g šećera
375 g kora za pite
150 g otopljenog maslaca
750 ml vode
7 klinčića
1 štapić cimeta
1 limun
2 žlice meda
Krema:
260 g griza
150 g šećera
50 g maslaca
1,5 l punomasnog mlijeka
1 jaje
Priprema:
Najprije skuhajte sirup od 750 ml vode, 400 g šećera, klinčića, cimeta, korice jednog limuna i soka polovice limuna. Kuhajte oko 25 minuta, dok se malo ne zgusne pa ostavite da se ohladi.
Obložite okrugli kalup za torte promjera 30 cm s 10 slojeva kora premazujući svaki sloj maslacem prije nego što stavite sljedeći i puštajući kore da vise preko ruba.
Zagrijte mlijeko gotovo do vrenja pa mu dodjate griz i šećer te kuhajte na laganoj vatri. Nemojte dozvoliti da provrije. Nakon što se krema zgusnula, dodajte jaje i dobro ga umutite, a zatim i maslac. Još jednom promiješajte pa izlijte kremu na kore, preko vrha pažljivo prebacite dio kora koji visi preko ruba, svaku koru premazujući maslacem. Zavrnite rub prema unutra kao da radite rub za pitu od prhkog tijesta (alternativno, samo prebacite kore preko površine, premazujući svaku maslacem, a preko svega stavite još jeednu koru i rubove joj zataknite uz rub kalupa)
Nakon zadnjeg premazivanja maslacem, oštrim nožem nježno zarežite pitu na kriške kriške kako biste je kasnije lakše narezali pa stavite pitu u pećnicu zagrijanu na 170 stupnjeva s ventilatorom te pecite oko 30-40 minuta, odnosno dok površina ne porumeni.
Izvadite iz pećnice i odmah ravnomjerno prelijte hladnim sirupom te ostavite da se sirup dobro upije prije rezanja.

Ako mislite da je baklava jedini grčki kolač (samo malo, ne tvrdimo mi da je njihova, o tome se već dugo spore s Turcima), ne znate što propuštate jer gastronomska baština te zemlje vrlo je bogata po pitanju slatkoga. Grčki galaktoboureko zapravo je pita s tankim korama i s nadjevom na bazi mlijeka, čemu duguje ime, a nakon što je ispečena, slastica se prelijeva aromatičnim sirupom s puno finih začina i korice citrusa - najčešće limuna, no neki više vole staviti naranču.
Sve skupa se stapa u slasticu kremastog nadjeva, hrskavih kora i bogatog okusa koji nećete zaboraviti.

Galaktobureko
Sastojci:
400 g šećera
375 g kora za pite
150 g otopljenog maslaca
750 ml vode
7 klinčića
1 štapić cimeta
1 limun
2 žlice meda
Krema:
260 g griza
150 g šećera
50 g maslaca
1,5 l punomasnog mlijeka
1 jaje
Priprema:
Najprije skuhajte sirup od 750 ml vode, 400 g šećera, klinčića, cimeta, korice jednog limuna i soka polovice limuna. Kuhajte oko 25 minuta, dok se malo ne zgusne pa ostavite da se ohladi.
Obložite okrugli kalup za torte promjera 30 cm s 10 slojeva kora premazujući svaki sloj maslacem prije nego što stavite sljedeći i puštajući kore da vise preko ruba.
Zagrijte mlijeko gotovo do vrenja pa mu dodjate griz i šećer te kuhajte na laganoj vatri. Nemojte dozvoliti da provrije. Nakon što se krema zgusnula, dodajte jaje i dobro ga umutite, a zatim i maslac. Još jednom promiješajte pa izlijte kremu na kore, preko vrha pažljivo prebacite dio kora koji visi preko ruba, svaku koru premazujući maslacem. Zavrnite rub prema unutra kao da radite rub za pitu od prhkog tijesta (alternativno, samo prebacite kore preko površine, premazujući svaku maslacem, a preko svega stavite još jeednu koru i rubove joj zataknite uz rub kalupa)
Nakon zadnjeg premazivanja maslacem, oštrim nožem nježno zarežite pitu na kriške kriške kako biste je kasnije lakše narezali pa stavite pitu u pećnicu zagrijanu na 170 stupnjeva s ventilatorom te pecite oko 30-40 minuta, odnosno dok površina ne porumeni.
Izvadite iz pećnice i odmah ravnomjerno prelijte hladnim sirupom te ostavite da se sirup dobro upije prije rezanja.
