Opet je hladno, odnosno barem je hladnije nego proteklih dana, a to znači da je vrijeme za još jednu rundu zimske spize. Kako je krenulo, vjerojatno zadnju sve do iza jeseni. Što vi imate u planu? Riječ je o kiselom kupusu sa svinjetinom, preciznije bržolama, dobrom primjeru "prave" spize, ali s vrlo zanimljivim, što bi se reklo, twistom. A za njega je zaslužan jedan inženjer.

Inženjer Ivan Zuanović, kojeg pratimo na Instagramu @inzenjer_kuhinje, od sasvim običnog kiselog kupusa i komada svinjetine za bržole napravio je pravi spektakl. Čak je konstruirao i pušnicu! Kako, vidjet ćete u priloženom videu, no, pomalo, doći ćemo do toga, neka vam prvo Ivan svojim riječima prepriča kako je složio ovu kombinaciju.

"Kud, što, kako s kiselim zeljem? Nisan ima pojma. I onda mi padne na pamet. Ajmo pokušat modernizirat zelje i meso. Nije da mu išta fali, dapače možda je takvo jelo i grehota dirat. Ali, mi smo inženjeri i propitkujemo sve društvene dogme. Kiselo zelje pomiša san sa karameliziranim lukom (hrpa luka u tavu u kojoj je otopljen maslac, malo soli i vode) i na laganoj vatri kuha dok nije posta gnjecav - ne bi smjelo išta zagoriti, na kraju san doda malo aceta balsamica i dimljene paprike.

Potato fondant, ukratko, zapečeni krumpir u tavi, podlije se maslacem i kasnije temeljcem i ubaci u pećnicu da se skuha. Otvoren san za prijedloge kako to sročiti u dvije - tri riječi hrvatskoga. Pečeno podlijevano - skuhani krumpir?

Meso - lipi komad kremenadle. Na naglo u tavu, još zera u pećnicu da bude tip - top. I mislin si - pa neće valjda ostat na ovome? Naravno da neće, na brzinu san složija pušnicu od dvije vatrostalne posude. 

Umak od pečenja. Nakon mesa deglazira s vinom i malo temeljca. Na kraju maslac da se zgusne. Gotovo.

Kobasu nareza na tanko, ka i slaninu. Stavija u hladnu tavu, skinija kad se zarumenilo".

Riječ je o kiselom kupusu sa svinjetinom, preciznije bržolama, dobrom primjeru "prave" spize, ali s vrlo zanimljivim, što bi se reklo, twistom. A za njega je zaslužan jedan inženjer.

Inženjer Ivan Zuanović, kojeg pratimo na Instagramu @inzenjer_kuhinje, od sasvim običnog kiselog kupusa i komada svinjetine za bržole napravio je pravi spektakl. Čak je konstruirao i pušnicu! Kako, vidjet ćete u priloženom videu, no, pomalo, doći ćemo do toga, neka vam prvo Ivan svojim riječima prepriča kako je složio ovu kombinaciju.

"Kud, što, kako s kiselim zeljem? Nisan ima pojma. I onda mi padne na pamet. Ajmo pokušat modernizirat zelje i meso. Nije da mu išta fali, dapače možda je takvo jelo i grehota dirat. Ali, mi smo inženjeri i propitkujemo sve društvene dogme. Kiselo zelje pomiša san sa karameliziranim lukom (hrpa luka u tavu u kojoj je otopljen maslac, malo soli i vode) i na laganoj vatri kuha dok nije posta gnjecav - ne bi smjelo išta zagoriti, na kraju san doda malo aceta balsamica i dimljene paprike.

Potato fondant, ukratko, zapečeni krumpir u tavi, podlije se maslacem i kasnije temeljcem i ubaci u pećnicu da se skuha. Otvoren san za prijedloge kako to sročiti u dvije - tri riječi hrvatskoga. Pečeno podlijevano - skuhani krumpir?

Meso - lipi komad kremenadle. Na naglo u tavu, još zera u pećnicu da bude tip - top. I mislin si - pa neće valjda ostat na ovome? Naravno da neće, na brzinu san složija pušnicu od dvije vatrostalne posude. 

Umak od pečenja. Nakon mesa deglazira s vinom i malo temeljca. Na kraju maslac da se zgusne. Gotovo.

Kobasu nareza na tanko, ka i slaninu. Stavija u hladnu tavu, skinija kad se zarumenilo".
