Nedavno sam bio u Portugalu te sam probao bakalar (bacalhau) na nekoliko načina, koji nisu naši uobičajeni recepti, ali bez obzira na to sama tekstura tog bakalara mi je bila različita pa mi nije baš jasno da li je to isti bakalar kojega mi pripremamo ili je to neka druga riba?

U ne tako davna vremena, prije izuma hladnjaka koji su nam danas sastavni dio života na način da ih doživljavamo kao nešto sasvim uobičajeno, čuvanje bilo kakve hrane na duže razdoblje je bilo posve problematično. Posebice je to bilo izraženo u Mediteranu gdje su visoke temperature pogodovale brzom kvarenju, naročito ribe i drugih morskih organizama koji i inače ne mogu izdržati dugo, a da se ne pokvare i time postanu neupotrebljivi.

Izvlačenje vode

Stoga su ljudi tražili, i našli, različite načine očuvanja ribe i sve u ovisnosti od klimatskih uvjeta područja gdje se riba lovila. Primjerice, kod nas je glavni način čuvanja bio soljenje, uglavnom srdele i inćuna, što se radilo još od antičkih vremena. U ta vremena se riba solila cijela, a tek u zadnjih nekoliko stotina godina riba se uz soljenje počela filetirati i dodatno čuvati u ulju, najčešće maslinovom.

Zašto se uopće riba soli? Odgovor je u djelovanju soli koja odstranjuje vodu iz mesa ribe i time smanjuje i usporava mikrobiološke i enzimatske aktivnosti koje dovode do kvarenja ribe. U područjima gdje soli nije bilo u tolikim količinama kao na Mediteranu, uz soljenje s manjom količinom soli dodatno se ribu sušilo i/ili dimilo ili se soljenje čak i preskakalo. Svim metodama je cilj bio isti: odstraniti što više vode iz tijela ribe čime će se spriječiti kvarenje na što duže vrijeme.

Samo sušenje također ima nekoliko različitih tehnika jer se sušenje može obaviti na suncu, zraku ili vjetru. Bakalar spada u ribe koje su se oduvijek najviše sušile, ali tehnika sušenja samog bakalara, a time i konačni proizvod, može biti različita. Bacalhau kako ste i naveli, je portuglaska riječ za bakalar, ali ne označava isti finalni proizvod kao i ovaj što ga mi uglavnom koristimo. Naime, bacalhau spada u kategoriju tzv. clipfish, što označava bakalara koji je prethodno soljen, a zatim sušen. Takvom bakalaru se na početku odstranjuje glava i utroba te veći dio kralježnice nakon čega se soli i tako ostaje dva do tri tjedna te se naposljetku ostavlja da se dodatno osuši.

Portugalski izum

Zanimljivo je da su ovu metodu izmislili upravo Portugalci koji su kao pomorski orijentirana nacija dosta vremena boravili na moru, kao pomorci i ribari, te su imali prijeku potrebu za nutritivno visokovrijednom hranom dostupnom kroz duže razdoblje. Također, dostupna im je bila relativno jeftinija sol, a boravili su i u područjima gdje se lovilo dosta bakalara, što ih je i dovelo do takve metode sušenja pri čemu se za sušenje uglavnom koristilo djelovanje sunca. Danas su područja za ribolov bakalara više prema sjevernom Atlantiku, a kako je i sol postala puno jeftinija i dostupnija nego prije, glavni proizvođači ove vrste bakalara su Norveška i Island, a glavni uvoznici uz Portugal su i ostale mediteranske zemlje te primjerice Brazil.

S druge strane bakalar koji mi uglavnom nalazimo u današnje vrijeme u Hrvatskoj spada u kategoriju stockfish. Osnovna razlika između stockfish i clipfish je što se u ovom slučaju bakalar ne soli te se reže glava i vadi utroba dok kralježnica ostaje. Nadalje, za sušenje se ne koristi sunce već hladni zrak i vjetar, pa time i sušenje traje duže, odnosno nekoliko mjeseci. Za to vrijeme odvija se fermentacija bakalara pri čemu se bakterije koriste za sazrijevanje, slično procesu sazrijevanja nekih sireva. Takva proizvodnja bakalara uvelike ovisi o klimatskim uvjetima jer se zahtijeva stabilno hladno vrijeme s temperaturom tek nešto iznad nule, te suhi zrak bez puno padalina. Niža temperatura može proizvesti ledene uvjete pri čemu kristali leda uništavaju strukturu mesa ribe, dok viša temperatura ubrzava bakteriološke procese, stoga je jasno da proizvođači ove delicije pažljivo prate trenutačne klimatske promjene i predviđaju eventualne posljedice. Nakon nekoliko zimskih mjeseci sušenja bakalar izgubi oko 80% sadržane vode te je krajem proljeća spreman za korištenje.

Prema tome, ako ste jeli bakalar u Portugalu najvjerojatnije ste jeli clipfish, koji je različit od stockfish koji jedemo mi. Usput, napomenimo i to da su glavni uvoznici stockfish u Europi Italija, Španjolska i Hrvatska, ali zemlja koja posljednjih godina drži primat u uvozu stockfish bakalara iz Norveške je, začuđujuće, Nigerija.

Nedavno sam bio u Portugalu te sam probao bakalar (bacalhau) na nekoliko načina, koji nisu naši uobičajeni recepti, ali bez obzira na to sama tekstura tog bakalara mi je bila različita pa mi nije baš jasno da li je to isti bakalar kojega mi pripremamo ili je to neka druga riba?

U ne tako davna vremena, prije izuma hladnjaka koji su nam danas sastavni dio života na način da ih doživljavamo kao nešto sasvim uobičajeno, čuvanje bilo kakve hrane na duže razdoblje je bilo posve problematično. Posebice je to bilo izraženo u Mediteranu gdje su visoke temperature pogodovale brzom kvarenju, naročito ribe i drugih morskih organizama koji i inače ne mogu izdržati dugo, a da se ne pokvare i time postanu neupotrebljivi.

Izvlačenje vode

Stoga su ljudi tražili, i našli, različite načine očuvanja ribe i sve u ovisnosti od klimatskih uvjeta područja gdje se riba lovila. Primjerice, kod nas je glavni način čuvanja bio soljenje, uglavnom srdele i inćuna, što se radilo još od antičkih vremena. U ta vremena se riba solila cijela, a tek u zadnjih nekoliko stotina godina riba se uz soljenje počela filetirati i dodatno čuvati u ulju, najčešće maslinovom.

Zašto se uopće riba soli? Odgovor je u djelovanju soli koja odstranjuje vodu iz mesa ribe i time smanjuje i usporava mikrobiološke i enzimatske aktivnosti koje dovode do kvarenja ribe. U područjima gdje soli nije bilo u tolikim količinama kao na Mediteranu, uz soljenje s manjom količinom soli dodatno se ribu sušilo i/ili dimilo ili se soljenje čak i preskakalo. Svim metodama je cilj bio isti: odstraniti što više vode iz tijela ribe čime će se spriječiti kvarenje na što duže vrijeme.

Samo sušenje također ima nekoliko različitih tehnika jer se sušenje može obaviti na suncu, zraku ili vjetru. Bakalar spada u ribe koje su se oduvijek najviše sušile, ali tehnika sušenja samog bakalara, a time i konačni proizvod, može biti različita. Bacalhau kako ste i naveli, je portuglaska riječ za bakalar, ali ne označava isti finalni proizvod kao i ovaj što ga mi uglavnom koristimo. Naime, bacalhau spada u kategoriju tzv. clipfish, što označava bakalara koji je prethodno soljen, a zatim sušen. Takvom bakalaru se na početku odstranjuje glava i utroba te veći dio kralježnice nakon čega se soli i tako ostaje dva do tri tjedna te se naposljetku ostavlja da se dodatno osuši.

Portugalski izum

Zanimljivo je da su ovu metodu izmislili upravo Portugalci koji su kao pomorski orijentirana nacija dosta vremena boravili na moru, kao pomorci i ribari, te su imali prijeku potrebu za nutritivno visokovrijednom hranom dostupnom kroz duže razdoblje. Također, dostupna im je bila relativno jeftinija sol, a boravili su i u područjima gdje se lovilo dosta bakalara, što ih je i dovelo do takve metode sušenja pri čemu se za sušenje uglavnom koristilo djelovanje sunca. Danas su područja za ribolov bakalara više prema sjevernom Atlantiku, a kako je i sol postala puno jeftinija i dostupnija nego prije, glavni proizvođači ove vrste bakalara su Norveška i Island, a glavni uvoznici uz Portugal su i ostale mediteranske zemlje te primjerice Brazil.

S druge strane bakalar koji mi uglavnom nalazimo u današnje vrijeme u Hrvatskoj spada u kategoriju stockfish. Osnovna razlika između stockfish i clipfish je što se u ovom slučaju bakalar ne soli te se reže glava i vadi utroba dok kralježnica ostaje. Nadalje, za sušenje se ne koristi sunce već hladni zrak i vjetar, pa time i sušenje traje duže, odnosno nekoliko mjeseci. Za to vrijeme odvija se fermentacija bakalara pri čemu se bakterije koriste za sazrijevanje, slično procesu sazrijevanja nekih sireva. Takva proizvodnja bakalara uvelike ovisi o klimatskim uvjetima jer se zahtijeva stabilno hladno vrijeme s temperaturom tek nešto iznad nule, te suhi zrak bez puno padalina. Niža temperatura može proizvesti ledene uvjete pri čemu kristali leda uništavaju strukturu mesa ribe, dok viša temperatura ubrzava bakteriološke procese, stoga je jasno da proizvođači ove delicije pažljivo prate trenutačne klimatske promjene i predviđaju eventualne posljedice. Nakon nekoliko zimskih mjeseci sušenja bakalar izgubi oko 80% sadržane vode te je krajem proljeća spreman za korištenje.

Prema tome, ako ste jeli bakalar u Portugalu najvjerojatnije ste jeli clipfish, koji je različit od stockfish koji jedemo mi. Usput, napomenimo i to da su glavni uvoznici stockfish u Europi Italija, Španjolska i Hrvatska, ali zemlja koja posljednjih godina drži primat u uvozu stockfish bakalara iz Norveške je, začuđujuće, Nigerija.
