Pokazalo se da više od polovice maslinovih ulja koja se prodaju kao ekstra djevičanska zapravo ne odgovaraju toj deklaraciji, piše Gloria.hr.

Čak više od polovice maslinovih ulja koja se na našem tržištu prodaju kao ekstra djevičanska ne odgovaraju deklaraciji! Ovaj porazni podatak objavio je Državni inspektorat nakon provedene analize.

Važno je pritom reći da se utvrđene “nesukladnosti” ne odnose na zdravstvenu ispravnost. Riječ je, naime, jednostavno o nižoj kategoriji od deklarirane na proizvodu. Zato je važno znati kako prepoznati pravo ekstra djevičansko maslinovo ulje.

Evo kako: ostavite ulje u hladnjaku 24 sata. Ako se zgusne, očvrsne, riječ o pravom ulju, ako se ne promijeni, to znači da ima dodataka. No, nikako ga nemojte čuvati u hladnjaku, već na tamnijem mjestu, na sobnoj temperaturi, u tamnim staklenim bocama.

Prešanje i filtriranje

Ekstra djevičansko maslinovo ulje koristite u prehrani kad god je to moguće zbog njegovih izuzetnih karakteristika. Ima antioksidativno, odnosno protuupalno djelovanje. Najzdravije je čisto djevičansko maslinovo ulje jer se dobiva jednostavnim prešanjem i filtriranjem zdravih maslina. Ako na deklaraciji piše “maslinovo ulje”, proizvod bi trebao biti dobiven miješanjem rafiniranog maslinovog ulja s ekstra djevičanskim ili djevičanskim maslinovim uljem.

Ekstra djevičansko maslinovo ulje ne sadrži više od 0,8 grama slobodnih masnih kiselina izraženih kao oleinska kiselina na 100 grama ulja, dok se djevičansko maslinovo ulje dobiva izravno iz ploda masline isključivo mehaničkim postupcima te sadrži najviše 2 grama slobodnih masnih kiselina izraženih kao oleinska kiselina na 100 grama proizvoda. Na djevičanskom maslinovu ulju stoji “ulje dobiveno izravno iz ploda masline isključivo mehaničkim postupcima”. Što je ulje izraženije gorčine, sadrži više antioksidansa, što je vrlo poželjno za zdravlje srca i krvnih žila. Maslinovo ulje, naime, pomaže sniziti loš (LDL) kolesterol i ukupni kolesterol u krvi te povisiti dobar (HDL) kolesterol, smanjuje pojavu aritmija, prekomjerno zgrušavanje krvi i stvaranje ugrušaka. Pomaže normalizaciji šećera u krvi pa je osobito poželjno u prehrani oboljelih od dijabetesa. Uz to štiti kožu, genetski materijal u stanicama, pomaže neutralizaciji negativnog djelovanja pasivnog pušenja i jača obrambeni mehanizam našeg tijela.

Može i za prženje

I pitanje koje se često postavlja - smije li se pržiti na maslinovu ulju? Odgovor glasi: uvijek ga radije stavljajte u salate, ali unatoč uvriježenom mišljenju da se maslinovo ulje ne bi trebalo koristiti pri kuhanju jer se time uništavaju sve njegove vrijedne tvari, ništa se loše neće dogoditi ni ako ga koristite za pečenje i prženje.

Ulja koja obiluju nezasićenim masnim kiselinama obično nisu pogodna za prženje, ali maslinovo ulje je iznimka jer sadrži visoku koncentraciju jednostruko nezasićene oleinske masne kiseline koja pridonosi stabilnosti ulja na visokim temperaturama.

Evo kako: ostavite ulje u hladnjaku 24 sata. Ako se zgusne, očvrsne, riječ o pravom ulju, ako se ne promijeni, to znači da ima dodataka. No, nikako ga nemojte čuvati u hladnjaku, već na tamnijem mjestu, na sobnoj temperaturi, u tamnim staklenim bocama.

Prešanje i filtriranje

Ekstra djevičansko maslinovo ulje koristite u prehrani kad god je to moguće zbog njegovih izuzetnih karakteristika. Ima antioksidativno, odnosno protuupalno djelovanje. Najzdravije je čisto djevičansko maslinovo ulje jer se dobiva jednostavnim prešanjem i filtriranjem zdravih maslina. Ako na deklaraciji piše “maslinovo ulje”, proizvod bi trebao biti dobiven miješanjem rafiniranog maslinovog ulja s ekstra djevičanskim ili djevičanskim maslinovim uljem.

Ekstra djevičansko maslinovo ulje ne sadrži više od 0,8 grama slobodnih masnih kiselina izraženih kao oleinska kiselina na 100 grama ulja, dok se djevičansko maslinovo ulje dobiva izravno iz ploda masline isključivo mehaničkim postupcima te sadrži najviše 2 grama slobodnih masnih kiselina izraženih kao oleinska kiselina na 100 grama proizvoda. Na djevičanskom maslinovu ulju stoji “ulje dobiveno izravno iz ploda masline isključivo mehaničkim postupcima”. Što je ulje izraženije gorčine, sadrži više antioksidansa, što je vrlo poželjno za zdravlje srca i krvnih žila. Maslinovo ulje, naime, pomaže sniziti loš (LDL) kolesterol i ukupni kolesterol u krvi te povisiti dobar (HDL) kolesterol, smanjuje pojavu aritmija, prekomjerno zgrušavanje krvi i stvaranje ugrušaka. Pomaže normalizaciji šećera u krvi pa je osobito poželjno u prehrani oboljelih od dijabetesa. Uz to štiti kožu, genetski materijal u stanicama, pomaže neutralizaciji negativnog djelovanja pasivnog pušenja i jača obrambeni mehanizam našeg tijela.

Može i za prženje

I pitanje koje se često postavlja - smije li se pržiti na maslinovu ulju? Odgovor glasi: uvijek ga radije stavljajte u salate, ali unatoč uvriježenom mišljenju da se maslinovo ulje ne bi trebalo koristiti pri kuhanju jer se time uništavaju sve njegove vrijedne tvari, ništa se loše neće dogoditi ni ako ga koristite za pečenje i prženje.

Pokazalo se da više od polovice maslinovih ulja koja se prodaju kao ekstra djevičanska zapravo ne odgovaraju toj deklaraciji, piše Gloria.hr.

Čak više od polovice maslinovih ulja koja se na našem tržištu prodaju kao ekstra djevičanska ne odgovaraju deklaraciji! Ovaj porazni podatak objavio je Državni inspektorat nakon provedene analize.
