Možete li odgovoriti na pitanje je li riba papigača jestiva riba, budući da sam vidio da ih ima različitih vrsta, a kruži priča da neke nisu jestive. Ako nisu sve vrste jestive, molio bih informaciju koja vrsta nije.

Imamo sreću da živimo u Jadranu pa mogu kazati da su sve autohtone jadranske ribe jestive i nema ni jedne koja je opasna ako se priprema na uobičajeni naš način. Kad kažem uobičajeni, onda moram naglasiti da naši načini spremanja ribe podrazumijevaju termičku obradu, a većina problematičnih riba obradom s visokom temperaturom prestaje biti problematična.

Što se tiče papigača koje pripadaju obitelji Scaridae, njih ima više vrsta, ali u Jadranu živi samo jedna, i to Sparisoma cretense, koja se uglavnom nalazi u južnom Jadranu, odakle se proteklih godina počela kretati i prema sjeveru pa je nalazimo i u nekim područjima srednjeg Jadrana. Kod ove vrste postoji izrazita razlika u obojenosti spolova te su plavkastosivi primjerci mužjaci, dok su vatrenocrvene sa žutim i bijelim mrljama ženke, pa je vjerojatno to razlog mišljenju da postoji više vrsta. Kao što sam već i rekao, papigača je jestiva, doduše njezina gastronomska vrijednost većini nije na nekoj visokoj razini, iako se ovdje ograđujem jer sad zalazimo u sferu gušta i ukusa, o čemu se, jasno, ne raspravlja.

Kostorog s bananama

Iskoristit ću i ovu priliku da se osvrnem na jestivost kostoroga jer su me brojni pitali i za tu vrstu, a zaključak je isti kao i za papigaču. Ipak, kod ove vrste preporučam skidanje kože jer je deblja, donekle slična koži hrskavičnih riba, te je priprema na različite načine time jednostavnija. Kod nas kostorog i dalje ima status egzotične ribe, a mnogi ga još nisu vidjeli uživo pa se, s obzirom na izgled, nakon ulova često i baci natrag u more. Osobno sam ga probao na različite načine, kako naše tradicionalne, tako i neke druge. Primjerice, u Brazilu se smatra delikatesom te se često sprema na neku verziju brazilskog brudeta. Ipak, to jelo samo izgledom podsjeća na brudet, jer su neki sastojci toga jela posve različiti od naših, primjerice s kostorogom se krčkaju i narezane banane pa je okus tog jela sasvim drukčiji od našeg brudeta.

Na početku sam spomenuo problematične ribe, ali naglasio sam i da se radi o uobičajenim autohtonim jadranskim vrstama. Nažalost, u posljednje vrijeme svjedoci smo brojnih promjena u Jadranu, u kojem nalazimo neke nove vrste koje uglavnom nazivamo invazivnima. Uz to što mogu promijeniti uobičajeni jadranski ekosustav, neke od tih riba su i posebno problematične jer su otrovne i opasne za ljudsko zdravlje. Ovdje treba upozoriti na glavne predstavnike takvih riba koje se zasad u Jadranu pojavljuju samo kao pojedinačni primjerci, a to su dvije vrste napuhača, Lagocephalus sceleratus i Lagocephalus lagocephalus. Te dvije ribe, u Japanu poznate kao fugu, u svojim unutarnjim organima sadrže jak i vrlo opasan otrov tetrodotoksin, koji konzumacijom može rezultirati i sa smrtnom posljedicom.

Stabilan otrov

Kako se, nasreću, u Jadranu i dalje rijetko nalaze, nisam ih imao priliku probati, ali sam zato šansu iskoristio u Japanu, gdje ih zbog toksičnosti pripremaju isključivo certificirani kuhari. Uglavnom, osobno mi nisu ništa posebno pa pretpostavljam da fama o tim ribama proizlazi iz njihove opasnosti za zdravlje. Poseban problem tih riba je u tome što je tetrodotoksin termički stabilan, što znači da uobičajena termička priprema jela ne razgrađuje otrov.

Stoga, da zaključimo, ako ulovite neku jadransku ribu, slobodno je možete konzumirati, a ako ulovite nešto čudno, prije konzumacije ova rubrika vam stoji na raspolaganju za daljnje informacije jer bolje je neke stvari preskočiti da poslije ne bude težih posljedica. Naime, prethodne dvije vrste nisu jedine toksične jer još nekoliko vrsta, koje su već nađene na ulazu u Jadran, ima slične karakteristike pa se s nepoznatim ribama ne bi trebalo igrati.

Možete li odgovoriti na pitanje je li riba papigača jestiva riba, budući da sam vidio da ih ima različitih vrsta, a kruži priča da neke nisu jestive. Ako nisu sve vrste jestive, molio bih informaciju koja vrsta nije.

Imamo sreću da živimo u Jadranu pa mogu kazati da su sve autohtone jadranske ribe jestive i nema ni jedne koja je opasna ako se priprema na uobičajeni naš način. Kad kažem uobičajeni, onda moram naglasiti da naši načini spremanja ribe podrazumijevaju termičku obradu, a većina problematičnih riba obradom s visokom temperaturom prestaje biti problematična.

Što se tiče papigača koje pripadaju obitelji Scaridae, njih ima više vrsta, ali u Jadranu živi samo jedna, i to Sparisoma cretense, koja se uglavnom nalazi u južnom Jadranu, odakle se proteklih godina počela kretati i prema sjeveru pa je nalazimo i u nekim područjima srednjeg Jadrana. Kod ove vrste postoji izrazita razlika u obojenosti spolova te su plavkastosivi primjerci mužjaci, dok su vatrenocrvene sa žutim i bijelim mrljama ženke, pa je vjerojatno to razlog mišljenju da postoji više vrsta. Kao što sam već i rekao, papigača je jestiva, doduše njezina gastronomska vrijednost većini nije na nekoj visokoj razini, iako se ovdje ograđujem jer sad zalazimo u sferu gušta i ukusa, o čemu se, jasno, ne raspravlja.

Kostorog s bananama

Iskoristit ću i ovu priliku da se osvrnem na jestivost kostoroga jer su me brojni pitali i za tu vrstu, a zaključak je isti kao i za papigaču. Ipak, kod ove vrste preporučam skidanje kože jer je deblja, donekle slična koži hrskavičnih riba, te je priprema na različite načine time jednostavnija. Kod nas kostorog i dalje ima status egzotične ribe, a mnogi ga još nisu vidjeli uživo pa se, s obzirom na izgled, nakon ulova često i baci natrag u more. Osobno sam ga probao na različite načine, kako naše tradicionalne, tako i neke druge. Primjerice, u Brazilu se smatra delikatesom te se često sprema na neku verziju brazilskog brudeta. Ipak, to jelo samo izgledom podsjeća na brudet, jer su neki sastojci toga jela posve različiti od naših, primjerice s kostorogom se krčkaju i narezane banane pa je okus tog jela sasvim drukčiji od našeg brudeta.

Na početku sam spomenuo problematične ribe, ali naglasio sam i da se radi o uobičajenim autohtonim jadranskim vrstama. Nažalost, u posljednje vrijeme svjedoci smo brojnih promjena u Jadranu, u kojem nalazimo neke nove vrste koje uglavnom nazivamo invazivnima. Uz to što mogu promijeniti uobičajeni jadranski ekosustav, neke od tih riba su i posebno problematične jer su otrovne i opasne za ljudsko zdravlje. Ovdje treba upozoriti na glavne predstavnike takvih riba koje se zasad u Jadranu pojavljuju samo kao pojedinačni primjerci, a to su dvije vrste napuhača, Lagocephalus sceleratus i Lagocephalus lagocephalus. Te dvije ribe, u Japanu poznate kao fugu, u svojim unutarnjim organima sadrže jak i vrlo opasan otrov tetrodotoksin, koji konzumacijom može rezultirati i sa smrtnom posljedicom.

Stabilan otrov

Kako se, nasreću, u Jadranu i dalje rijetko nalaze, nisam ih imao priliku probati, ali sam zato šansu iskoristio u Japanu, gdje ih zbog toksičnosti pripremaju isključivo certificirani kuhari. Uglavnom, osobno mi nisu ništa posebno pa pretpostavljam da fama o tim ribama proizlazi iz njihove opasnosti za zdravlje. Poseban problem tih riba je u tome što je tetrodotoksin termički stabilan, što znači da uobičajena termička priprema jela ne razgrađuje otrov.

Stoga, da zaključimo, ako ulovite neku jadransku ribu, slobodno je možete konzumirati, a ako ulovite nešto čudno, prije konzumacije ova rubrika vam stoji na raspolaganju za daljnje informacije jer bolje je neke stvari preskočiti da poslije ne bude težih posljedica. Naime, prethodne dvije vrste nisu jedine toksične jer još nekoliko vrsta, koje su već nađene na ulazu u Jadran, ima slične karakteristike pa se s nepoznatim ribama ne bi trebalo igrati.
