Ugledate li u vrtu ili na okućnici biljku okruglastih, mesnatih listova koja raste priljubljena uz tlo ili po zidovima starih, kamenih građevina, nemojte je čupati. Uzmite nožić i pažljivo odrežite par stručaka jer nije riječ o korovu nego o jestivoj biljci koja je pritom jako zdrava i ukusna, a s dolaskom proljeća upravo je počeo nicati i širiti se.
Zapitete li stariji svit o kojoj je biljci zapravo riječ, mogli biste dobiti različite odgovore, ovisno o području u kojem živite. Kao u slučaju većine ostalih korisnih biljaka - a ova je itekako korisna, jer osim za hranu i lijek služi i kao hrana za domaće životinje, osobito kokoši - i za ovo samoniklo bilje poznato je puno narodnih imena. A tko zna koliko ih je tek palo u zaborav...
Bilja o kojoj je ovdje riječ raste širom Hrvatske pa shodno tome nosi puno raznolikih naziva: tušt, tucanj, semizot i portulak samo su neki od naziva za biljku latinskog imena Portulaca oleracea. Za potrebe ove priče zvat ćemo je tušt, jer joj to ime baš stoji, s obzirom na okruglaste, debeljuškaste, tuste listiće, a vi je zovite kako god vam je drago, samo je više nemojte gaziti i čupati.

Tušt se od davnina koristio u narodnoj medicini kao sredstvo za čišćenje krvi, snižavanje visoke temperature i lijek za opekline, a u tradicionalnoj kineskoj medicini slovio je kao povrće za dugovječnost, što nije sasvim neutemeljeno jer suvremena je medicina utvrdila kako je najbogatiji izvor alfa-linolenske omega-3 masne kiseline, da po sadržaju vitamina C nadmašuje većinu povrća, a po sadržaju betakarotena "šiša" mrkvu te da pored svega toga ima više vitamina E od špinata.
U sastavu su mu i drugi fitonutrijenti, antioksidansi i minerali poput magnezija, kalcija i željeza i to u pozamašnim količinama, a zbog svega toga danas se smatra superhranom.

Osim kao lijek, tušt se naveliko koristio u prehrani, čak se kiselio za zimnicu, no nažalost većina tog znanja pala je u zaborav. Zahvaljujući entuzijastima koji vole i cijene samoniklo povrće, na društvenim mrežama, blogovima i forumima može se pronaći puno zgodnih ideja za njegovu primjenu u kuhinji. Kako tušt raste ne samo kod nas nego u većem dijelu Europe, u Srednjoj Aziji, odakle potječe, na Srednjem Istoku, u Središnjoj Americi pa čak i u Australiji
Cijela biljka je jestiva - od listova, preko stabljika do pupoljaka i cvjetova koji će se pojaviti tek potkraj lipnja, a jestive su čak i sjemenke, okusa sličnog lanenima, od kojih se radi čaj, ali ih se također melje i koristi kao brašno.

Najjednostavniji način pripreme tušta je na salatu, pri čemu ga je moguće kombinirati s drugim samoniklim biljem ili biljkama koje i inače koristimo u takvim jelima. Ako imate problema s bubrezima, budite na oprezu jer tušt sadrži oksalnu kiselinu, koja može biti problematična za ljude s takvim zdravstvenim stanjima. U tom slučaju nemojte pretjerivati s količinama, a za svaki slučaj potrudite se neutralizirati taj nezgodan spoj dodavanjem namirnica bogatih kalcijem, poput mliječnih proizvoda. Neki savjetuju čak i namakanje tušta u otopini sode bikarbone.
Pored salate, od tušta možete napraviti ukusno varivo. Imajte na umu da tušt, kad se kuha, ima svojstvo zgušnjavanja hrane pa će vam jelo u koje ste ga dodali vjerojatno ispasti nešto gušće nego da ste ga kuhali bez tušta.

Od tušta možete također napraviti i pesto, možete ga ubaciti u smoothie, možete ga koristiti umjesto špinata u nadjevu za pite, canellone, palačinke, lazanje i slična jela. Možete ga lešati poput šparoga pa poslužiti uz tvrdo kuhana jaja ili samog, uz malo maslinovog ulja i po želji koju kap limunovog soka u obliku tople salate ili u teću ubaciti koji krumpirić pa ćete dobiti lijep ukusan povrtni prilog ili primo piatto. Odličan je i kad se ispirja na malo ulja i vode, bilo sam ili kao dodatak kvinoji, prosu i kus kusu, a neki tvrde da im je najdraži kad se poput šparoga doda u fritaje.
Nudimo vam zgodan recept za gustu juhu od tušta i krumpira te vrlo jednostavan recept za dip od tušta i jogurta, jako dobar za umakanje prutića od povrća, prženih krumpirića, domaćih krekera od sjemenki ili tortilla chipsa, no može vam poslužiti i kao zgodan prilog uz mesna jela ili pečeno povrće. Ako ne uspijete prikupiti dovoljno tušta, u oba ga recepta možete kombinirati s mladim špinatom.
Juha od tušta
Sastojci:
750 ml juhe od povrća
120 g tušta
2 krumpira
1 luk
2 žlice ulja
2 žlice slatkog vrhnja, vrhnja za kuhanje, kokosovog vrhnja ili krem sira
sol
Priprema:
Tušt operite i osušite, uklonite mu deblje stabljike. Luk i krumpir očistite pa ih nasjeckajte na kockice.
Zagrijte ulje, dodajte luk pa ga pirjajte dok ne postane proziran. Dodajte tušt i krumpir pa kratko pirjajte, dok ne ispari tekućina, zatim dodajte juhu od povrća, posolite i kuhajte na umjerenoj vatri dok krumpir ne omekša. Želite li izvući što više hranjivih tvari iz tušta, dodajte ga tek kad je krumpir već skoro gotov pa kuhajte oko pet minuta.
Skuhanu juhu usitnite u blenderu ili uz pomoć štapnog miksera pa joj dodajte vrhnje.
Dip od tušta
Sastojci:
120 g jogurta
50 g tušta
1 žlica maslinovog ulja
1 režanj češnjaka ili 1 pero mladog luka
sol
Priprema:
Tušt i češnjak, odnosno mladi luk sitno nasjeckajte pa ih pomiješajte s ostalim sastojcima.
Nemojte se koristiti blenderom, jer će tušt "otići u vodu".
Želite li gušći umak, zamijenite 1/3 jogurta krem sirom.

Ugledate li u vrtu ili na okućnici biljku okruglastih, mesnatih listova koja raste priljubljena uz tlo ili po zidovima starih, kamenih građevina, nemojte je čupati. Uzmite nožić i pažljivo odrežite par stručaka jer nije riječ o korovu nego o jestivoj biljci koja je pritom jako zdrava i ukusna, a s dolaskom proljeća upravo je počeo nicati i širiti se.
Zapitete li stariji svit o kojoj je biljci zapravo riječ, mogli biste dobiti različite odgovore, ovisno o području u kojem živite. Kao u slučaju većine ostalih korisnih biljaka - a ova je itekako korisna, jer osim za hranu i lijek služi i kao hrana za domaće životinje, osobito kokoši - i za ovo samoniklo bilje poznato je puno narodnih imena. A tko zna koliko ih je tek palo u zaborav...
Bilja o kojoj je ovdje riječ raste širom Hrvatske pa shodno tome nosi puno raznolikih naziva: tušt, tucanj, semizot i portulak samo su neki od naziva za biljku latinskog imena Portulaca oleracea. Za potrebe ove priče zvat ćemo je tušt, jer joj to ime baš stoji, s obzirom na okruglaste, debeljuškaste, tuste listiće, a vi je zovite kako god vam je drago, samo je više nemojte gaziti i čupati.

Tušt se od davnina koristio u narodnoj medicini kao sredstvo za čišćenje krvi, snižavanje visoke temperature i lijek za opekline, a u tradicionalnoj kineskoj medicini slovio je kao povrće za dugovječnost, što nije sasvim neutemeljeno jer suvremena je medicina utvrdila kako je najbogatiji izvor alfa-linolenske omega-3 masne kiseline, da po sadržaju vitamina C nadmašuje većinu povrća, a po sadržaju betakarotena "šiša" mrkvu te da pored svega toga ima više vitamina E od špinata.
U sastavu su mu i drugi fitonutrijenti, antioksidansi i minerali poput magnezija, kalcija i željeza i to u pozamašnim količinama, a zbog svega toga danas se smatra superhranom.

Osim kao lijek, tušt se naveliko koristio u prehrani, čak se kiselio za zimnicu, no nažalost većina tog znanja pala je u zaborav. Zahvaljujući entuzijastima koji vole i cijene samoniklo povrće, na društvenim mrežama, blogovima i forumima može se pronaći puno zgodnih ideja za njegovu primjenu u kuhinji. Kako tušt raste ne samo kod nas nego u većem dijelu Europe, u Srednjoj Aziji, odakle potječe, na Srednjem Istoku, u Središnjoj Americi pa čak i u Australiji
Cijela biljka je jestiva - od listova, preko stabljika do pupoljaka i cvjetova koji će se pojaviti tek potkraj lipnja, a jestive su čak i sjemenke, okusa sličnog lanenima, od kojih se radi čaj, ali ih se također melje i koristi kao brašno.

Najjednostavniji način pripreme tušta je na salatu, pri čemu ga je moguće kombinirati s drugim samoniklim biljem ili biljkama koje i inače koristimo u takvim jelima. Ako imate problema s bubrezima, budite na oprezu jer tušt sadrži oksalnu kiselinu, koja može biti problematična za ljude s takvim zdravstvenim stanjima. U tom slučaju nemojte pretjerivati s količinama, a za svaki slučaj potrudite se neutralizirati taj nezgodan spoj dodavanjem namirnica bogatih kalcijem, poput mliječnih proizvoda. Neki savjetuju čak i namakanje tušta u otopini sode bikarbone.
Pored salate, od tušta možete napraviti ukusno varivo. Imajte na umu da tušt, kad se kuha, ima svojstvo zgušnjavanja hrane pa će vam jelo u koje ste ga dodali vjerojatno ispasti nešto gušće nego da ste ga kuhali bez tušta.

Od tušta možete također napraviti i pesto, možete ga ubaciti u smoothie, možete ga koristiti umjesto špinata u nadjevu za pite, canellone, palačinke, lazanje i slična jela. Možete ga lešati poput šparoga pa poslužiti uz tvrdo kuhana jaja ili samog, uz malo maslinovog ulja i po želji koju kap limunovog soka u obliku tople salate ili u teću ubaciti koji krumpirić pa ćete dobiti lijep ukusan povrtni prilog ili primo piatto. Odličan je i kad se ispirja na malo ulja i vode, bilo sam ili kao dodatak kvinoji, prosu i kus kusu, a neki tvrde da im je najdraži kad se poput šparoga doda u fritaje.
Nudimo vam zgodan recept za gustu juhu od tušta i krumpira te vrlo jednostavan recept za dip od tušta i jogurta, jako dobar za umakanje prutića od povrća, prženih krumpirića, domaćih krekera od sjemenki ili tortilla chipsa, no može vam poslužiti i kao zgodan prilog uz mesna jela ili pečeno povrće. Ako ne uspijete prikupiti dovoljno tušta, u oba ga recepta možete kombinirati s mladim špinatom.
Juha od tušta
Sastojci:
750 ml juhe od povrća
120 g tušta
2 krumpira
1 luk
2 žlice ulja
2 žlice slatkog vrhnja, vrhnja za kuhanje, kokosovog vrhnja ili krem sira
sol
Priprema:
Tušt operite i osušite, uklonite mu deblje stabljike. Luk i krumpir očistite pa ih nasjeckajte na kockice.
Zagrijte ulje, dodajte luk pa ga pirjajte dok ne postane proziran. Dodajte tušt i krumpir pa kratko pirjajte, dok ne ispari tekućina, zatim dodajte juhu od povrća, posolite i kuhajte na umjerenoj vatri dok krumpir ne omekša. Želite li izvući što više hranjivih tvari iz tušta, dodajte ga tek kad je krumpir već skoro gotov pa kuhajte oko pet minuta.
Skuhanu juhu usitnite u blenderu ili uz pomoć štapnog miksera pa joj dodajte vrhnje.
Dip od tušta
Sastojci:
120 g jogurta
50 g tušta
1 žlica maslinovog ulja
1 režanj češnjaka ili 1 pero mladog luka
sol
Priprema:
Tušt i češnjak, odnosno mladi luk sitno nasjeckajte pa ih pomiješajte s ostalim sastojcima.
Nemojte se koristiti blenderom, jer će tušt "otići u vodu".
Želite li gušći umak, zamijenite 1/3 jogurta krem sirom.
