Što je tajna savršenog gulaša, pitanje je koje si mnogi postavljaju. Dakle, ono što razlikuje prosječan i običan gulaš je dubina okusa, a ta se može postići samo ako se meso odmah na početku fino prepeče. Na masti ili na ulju, zapravo nije ni važno. Važno je stvoriti slasni karamelizirani sloj na svakoj kockici mesa i zato je preporučljivo, ako kuhate u manjoj teći ili pripremate veću količinu gulaša, ovaj korak odraditi u serijama.

Taj je karameliziranin sloj itekako važan: ne samo da svojom jedinstvenom aromom pojačava i produbljuje okus jela, nego ujedno čini barijeru između umaka u kojem se meso kasnije kuha i unutrašnjosti mesa, čuvajući mesne sokove. Rezultat je ukusan gulaš čija je svaka kockica mesa prava bombica okusa, a pritom je mekana i sočna baš onako kako priželjkujete. No ništa od toga nećete uspjeti postići pirjate li meso zajedno s lukom. Luk za vrijeme dinstanja ispušta tekućinu, a ta tekućina moči meso, čineći da se ono kuha, umjesto da se prži. Nešto je bolja opcija dodati meso luku kad je već omekšao i uhvatio boju, ali tada riskirate da će vam luk početi gorjeti.

Nakon što ste završili s obradom mesa, izvadite ga, a na istu masnoću dodajte usitnjeni luk. Ako radite u serijama i želite uštedjeti vrijeme, tada luk pirjajte u susjednom loncu pa mu, kad je lijepo mekan i dobio je primamljivu zlatnosmeđu boju, dodajte češnjak, mrkvu i celer, a kad su i oni svenuli ubacite koncentrat rajčice, pričekajte da malo potamni, zalijte ga vinom i tek tada dodajte meso.

Dakle, ono što razlikuje prosječan i običan gulaš je dubina okusa, a ta se može postići samo ako se meso odmah na početku fino prepeče. Na masti ili na ulju, zapravo nije ni važno. Važno je stvoriti slasni karamelizirani sloj na svakoj kockici mesa i zato je preporučljivo, ako kuhate u manjoj teći ili pripremate veću količinu gulaša, ovaj korak odraditi u serijama.

Taj je karameliziranin sloj itekako važan: ne samo da svojom jedinstvenom aromom pojačava i produbljuje okus jela, nego ujedno čini barijeru između umaka u kojem se meso kasnije kuha i unutrašnjosti mesa, čuvajući mesne sokove. Rezultat je ukusan gulaš čija je svaka kockica mesa prava bombica okusa, a pritom je mekana i sočna baš onako kako priželjkujete. No ništa od toga nećete uspjeti postići pirjate li meso zajedno s lukom. Luk za vrijeme dinstanja ispušta tekućinu, a ta tekućina moči meso, čineći da se ono kuha, umjesto da se prži. Nešto je bolja opcija dodati meso luku kad je već omekšao i uhvatio boju, ali tada riskirate da će vam luk početi gorjeti.

Nakon što ste završili s obradom mesa, izvadite ga, a na istu masnoću dodajte usitnjeni luk. Ako radite u serijama i želite uštedjeti vrijeme, tada luk pirjajte u susjednom loncu pa mu, kad je lijepo mekan i dobio je primamljivu zlatnosmeđu boju, dodajte češnjak, mrkvu i celer, a kad su i oni svenuli ubacite koncentrat rajčice, pričekajte da malo potamni, zalijte ga vinom i tek tada dodajte meso.
