Nema do gradela! Svi se baš razveselimo svakoj prilici za okupiti se uz specijalitete pripremljene na žaru, jer, kao što je poznato, u dobrom društvu i na svježem zraku još se slađe jede. Međutim, meso, riba ili povrće s gradela još će vam bolje prijati poslužite li ih uz ukusne umake, pesta, marinade i začinske maslace.
Uloga takvih dodataka je u isticanju određenih komponenti okusa, ali nam također pomažu postići ono savršenstvo kojem svi stremimo kad radimo gradele, a to je da hrana nam se hrana pripremljena na njima lijepo topi u ustima i tjera nas da zadovoljno poližemo prste. Upravo zbog toga neki od njih se osim u svojstvu dodatka za podizanje okusa mogu naći u ulozi marinade ili premaza, a kad se koriste na taj način pomažu u postizanju mekoće i sočnosti.
Stoga vam nudimo recepte za chimichurri koji savršeno odgovara uz odreske, piletinu, ali i uz ribu poput tune, zatim recept za osvježavajući salmoriglio, koji paše uz ribu i povrće te za popularni BBQ umak uz koji meso postaje osobito pikantno.

Chimichurri
Sastojci
120 ml maslinova ulja
3 žlice octa
2 1/2 žlice sjeckanog češnjaka
2 žlice svježih listova origana
1 1/2 žlice sjeckanog peršina
2 žličice mljevene crvene paprike
sol, papar
Priprema:
Grubo nasjeckajte začinsko bilje i češnjak, odmjerite navedene količine pa ih ubacite u blender s octom i crvenom paprikom.
Blendajte dok ne dobijete glatku smjesu. Prebacite je u zdjelicu, posolite, popaprite i prelijte uljem te sve pomiješajte.
Pustite da odstoji najmanje 20 minuta prije upotrebe. Može se koristiti kao marinada, za premazivanje mesa dok se peče ili kao dodatak tek pečenom mesu kako bi se proželo okusima iz umaka dok odmara prije rezanja.

Salmoriglio
Sastojci
50 ml maslinova ulja
30 ml vruće vode
1 limun
1 češanj češnjaka
1/2 žličice sjeckanog origana
1/2 žličice sjeckanog peršina
1/4 žličice soli
malo crnog papra
Priprema:
Nasjeckajte začinsko bilje. Češnjak naribajte ili usitnite u mužaru (u tom slučaju dodajte mu i začinsko bilje). Iscijedite limun.
Dobro izmiješajte vruću vodu i maslinovo ulje kako bi se smjesa emulgirala. Dodajte preostale sastojke, promiješajte te poslužite odmah. Poslužite salmoriglio uz pečenu ribu ili povrće, a možete ga koristiti i kao marinadu za meso, u svrhu dodavanja okusa i omekšavanja.
Pripremu ovog umaka možete odraditi i u blenderu, ali će mu tekstura biti malo gušća.

BBQ umak
Sastojci:
400 g kečapa
240 g jabučnog octa
120 g smeđeg šećera
100 g Sriracha umaka
40 g Worcestershire umaka
20 g senfa
15 g sjemenki kumina
15 g čili pahuljica
15 g papra u zrnu
Priprema:
Tostirajte kumin, čili i papar u zrnu pa ih sameljite u mužaru. Pomiješajte ih s ostalim sastojcima i kuhajte dok se tekućina malo ne reducira, zatim maknite s vatre i malo ohladite.
Kušajte. Ako vam je preslatko, dodajte malo jabučnog octa, kvasine ili limunova soka. Ako vam je previše kiselo, dodajte još malo šećera. Fali li vam ljutine, pomoći će koja kap Tabasca.
Umak uz pomoć kista mažite po mesu dok se peče. Mažite u više navrata, sve dok meso nije ispečeno.

Nema do gradela! Svi se baš razveselimo svakoj prilici za okupiti se uz specijalitete pripremljene na žaru, jer, kao što je poznato, u dobrom društvu i na svježem zraku još se slađe jede. Međutim, meso, riba ili povrće s gradela još će vam bolje prijati poslužite li ih uz ukusne umake, pesta, marinade i začinske maslace.
Uloga takvih dodataka je u isticanju određenih komponenti okusa, ali nam također pomažu postići ono savršenstvo kojem svi stremimo kad radimo gradele, a to je da hrana nam se hrana pripremljena na njima lijepo topi u ustima i tjera nas da zadovoljno poližemo prste. Upravo zbog toga neki od njih se osim u svojstvu dodatka za podizanje okusa mogu naći u ulozi marinade ili premaza, a kad se koriste na taj način pomažu u postizanju mekoće i sočnosti.
Stoga vam nudimo recepte za chimichurri koji savršeno odgovara uz odreske, piletinu, ali i uz ribu poput tune, zatim recept za osvježavajući salmoriglio, koji paše uz ribu i povrće te za popularni BBQ umak uz koji meso postaje osobito pikantno.

Chimichurri
Sastojci
120 ml maslinova ulja
3 žlice octa
2 1/2 žlice sjeckanog češnjaka
2 žlice svježih listova origana
1 1/2 žlice sjeckanog peršina
2 žličice mljevene crvene paprike
sol, papar
Priprema:
Grubo nasjeckajte začinsko bilje i češnjak, odmjerite navedene količine pa ih ubacite u blender s octom i crvenom paprikom.
Blendajte dok ne dobijete glatku smjesu. Prebacite je u zdjelicu, posolite, popaprite i prelijte uljem te sve pomiješajte.
Pustite da odstoji najmanje 20 minuta prije upotrebe. Može se koristiti kao marinada, za premazivanje mesa dok se peče ili kao dodatak tek pečenom mesu kako bi se proželo okusima iz umaka dok odmara prije rezanja.

Salmoriglio
Sastojci
50 ml maslinova ulja
30 ml vruće vode
1 limun
1 češanj češnjaka
1/2 žličice sjeckanog origana
1/2 žličice sjeckanog peršina
1/4 žličice soli
malo crnog papra
Priprema:
Nasjeckajte začinsko bilje. Češnjak naribajte ili usitnite u mužaru (u tom slučaju dodajte mu i začinsko bilje). Iscijedite limun.
Dobro izmiješajte vruću vodu i maslinovo ulje kako bi se smjesa emulgirala. Dodajte preostale sastojke, promiješajte te poslužite odmah. Poslužite salmoriglio uz pečenu ribu ili povrće, a možete ga koristiti i kao marinadu za meso, u svrhu dodavanja okusa i omekšavanja.
Pripremu ovog umaka možete odraditi i u blenderu, ali će mu tekstura biti malo gušća.

BBQ umak
Sastojci:
400 g kečapa
240 g jabučnog octa
120 g smeđeg šećera
100 g Sriracha umaka
40 g Worcestershire umaka
20 g senfa
15 g sjemenki kumina
15 g čili pahuljica
15 g papra u zrnu
Priprema:
Tostirajte kumin, čili i papar u zrnu pa ih sameljite u mužaru. Pomiješajte ih s ostalim sastojcima i kuhajte dok se tekućina malo ne reducira, zatim maknite s vatre i malo ohladite.
Kušajte. Ako vam je preslatko, dodajte malo jabučnog octa, kvasine ili limunova soka. Ako vam je previše kiselo, dodajte još malo šećera. Fali li vam ljutine, pomoći će koja kap Tabasca.
Umak uz pomoć kista mažite po mesu dok se peče. Mažite u više navrata, sve dok meso nije ispečeno.
