Volite li kuhati i pripremati slastice, možda ste se već susreli s problemom koji se javlja oko sode, konkretno sode bikarbone i praška za pecivo. Mnogi su pogrešno uvjereni kako je riječ o jednoj te istoj stvari te da se soda bikarbona i prašak za pecivo mogu koristiti proizvoljno, odnosno da je u redu uzeti ono što vam se nađe pri ruci.
Ako ste ikad pokušali izvesti opisanu zamjenu, velika je vjerojatnost da niste bili osobito oduševljeni rezultatom, a razlog je u tome što se soda bikarbona i prašak za pecivo razlikuju po sastavu.
Soda bikarbona može se dosta uspješno koristiti za dizanje tijesta, ali pod jednim uvjetom: trebate joj dodati i neki kiseli sastojak, koji će pokrenuti kemijsku reakciju - sjetite se kako treba postupati sa sodom kad se koristi kao sredstvo za čišćenje: koristite li je samu, nećete se osobito usrećiti, ali ako joj dodate malo limunske kiseline ili limunovog soka, lijepo će se zapjeniti i uspješno odraditi posao čišćenja.

Slično je kad je dodajte sastojcima za tijesto - izostavite li kiselu komponentu, soda neće dobro obaviti posao. Kiseli dodatak ne mora nužno biti limunov sok, poslužit će i mlaćenica, čokolada, kiselo vrhnje, jogurt i slični sastojci.
Dodatne kiseline neće vam biti potrebne ako radite s praškom za pecivo, jer prašak za pecivo je zapravo soda bikarbona kojoj je dodana vinska kiselina pa je sve što je potrebno da se prašak za pecivo aktivira bilo koja vrsta tekućine.
Ako ste primorani zamijeniti prašak za pecivo sodom bikarbonom, uzmite u obzir da soda bikarbona ima veću snagu pa smanjite navedenu količinu: umjesto žličice praška za pecivo stavite 1/3 do 1/2 žličice sode bikarbone te povećajte količinu kiselog sastojaka u receptu.

Još je jednu stvar dobro imati na umu kad se soda bikarbona koristi u pripremi hrane: ne smije se pretjerati s količinom, jer će pokvariti okus jela. Jednako se odnosi i na prašak za pecivo pa je uputno pridržavati se navedenih količina. Ako mislite dodati više sode bikarbone ili praška za pecivo jer niste sigurni da je sastojak s kojim radite svjež, puno je mudrije provjeriti ima li i dalje dobru sposobnost dizanja.
Za provjeru praška za pecivo stavite malu količinu na tanjurić i dodajte mu malo vruće vode; ako se zapjeni sve je u redu. Za provjeru sode bikarbone, stavite malu količinu na tanjurić pa kapnite malo limunovog soka. I u ovom slučaju, pjena je dobar znak.

Volite li kuhati i pripremati slastice, možda ste se već susreli s problemom koji se javlja oko sode, konkretno sode bikarbone i praška za pecivo. Mnogi su pogrešno uvjereni kako je riječ o jednoj te istoj stvari te da se soda bikarbona i prašak za pecivo mogu koristiti proizvoljno, odnosno da je u redu uzeti ono što vam se nađe pri ruci.
Ako ste ikad pokušali izvesti opisanu zamjenu, velika je vjerojatnost da niste bili osobito oduševljeni rezultatom, a razlog je u tome što se soda bikarbona i prašak za pecivo razlikuju po sastavu.
Soda bikarbona može se dosta uspješno koristiti za dizanje tijesta, ali pod jednim uvjetom: trebate joj dodati i neki kiseli sastojak, koji će pokrenuti kemijsku reakciju - sjetite se kako treba postupati sa sodom kad se koristi kao sredstvo za čišćenje: koristite li je samu, nećete se osobito usrećiti, ali ako joj dodate malo limunske kiseline ili limunovog soka, lijepo će se zapjeniti i uspješno odraditi posao čišćenja.

Slično je kad je dodajte sastojcima za tijesto - izostavite li kiselu komponentu, soda neće dobro obaviti posao. Kiseli dodatak ne mora nužno biti limunov sok, poslužit će i mlaćenica, čokolada, kiselo vrhnje, jogurt i slični sastojci.
Dodatne kiseline neće vam biti potrebne ako radite s praškom za pecivo, jer prašak za pecivo je zapravo soda bikarbona kojoj je dodana vinska kiselina pa je sve što je potrebno da se prašak za pecivo aktivira bilo koja vrsta tekućine.
Ako ste primorani zamijeniti prašak za pecivo sodom bikarbonom, uzmite u obzir da soda bikarbona ima veću snagu pa smanjite navedenu količinu: umjesto žličice praška za pecivo stavite 1/3 do 1/2 žličice sode bikarbone te povećajte količinu kiselog sastojaka u receptu.

Još je jednu stvar dobro imati na umu kad se soda bikarbona koristi u pripremi hrane: ne smije se pretjerati s količinom, jer će pokvariti okus jela. Jednako se odnosi i na prašak za pecivo pa je uputno pridržavati se navedenih količina. Ako mislite dodati više sode bikarbone ili praška za pecivo jer niste sigurni da je sastojak s kojim radite svjež, puno je mudrije provjeriti ima li i dalje dobru sposobnost dizanja.
Za provjeru praška za pecivo stavite malu količinu na tanjurić i dodajte mu malo vruće vode; ako se zapjeni sve je u redu. Za provjeru sode bikarbone, stavite malu količinu na tanjurić pa kapnite malo limunovog soka. I u ovom slučaju, pjena je dobar znak.
