Priznat ću vam na samom početku, na ovaj sam se novinarski zadatak uputila s blagom dozom zebnje. A zadatak je bio provjeriti kako pod novim vlasnicima "diše" jedan od mojih dražih restorana, restoran je Duje, koji je posljednjih 30 godina držala obitelj Matijašević.

Novi vlasnici su, ako vam je nekako promaklo, Iris i Marko Livaja. Bila je ura za ručak, točno dva popodne i mislite li slijediti moj primjer pa navratiti na Gripe u isti sat, odmah ću vam savjetovati: budite pametniji i zatražite rezervaciju. Slobodno mjesto sam jedva pronašla, ako ne računamo par stolova uz sam prozor koje je nesvakidašnji jesenski zvizdan učinio gotovo neupotrebljivima. Da, u restoranu je bila i Iris, ali Marko se nije ukazao. 

Osim veće popunjenosti primijetila sam i određene promjene u uređenju interijera, no ono što me najviše zanimalo odnosilo se na jelovnik i izvedbu ekipe iz kuhinje pa vam neću pisati o dekoru, no istaknut ću da se, za razliku od uređenja, osoblje nije mijenjalo pa me razveselilo vidjeti dobro poznatog i uvijek raspoloženog iskusnog konobara.

Pašteta od škampi

No da konačno prijeđem na stvar, odnosno - spizu. Za predjelo smo naručili jedno od omiljenih jela prilikom prethodnih posjeta, paštetu od škampi. Na prvi zalogaj bilo je jasno da recept nisu mijenjali, škampi su se sasvim pristojno osjetili, a pašteta je bila poznato kremasta, s dosta maslaca.

Malo razočaranje bio je nedostatak prepečenog kruha, za što se konobar unaprijed ispričao, a mi smo, s obzirom na gužvu, imali razumijevanja. Nažalost, baguette koji smo dobili kao zamjenu bio je malo žilav. No nije mi, kako se kaže, "zapeo za grlo", a u tome je pomogla ugodno pitka Kabola malvazija (na čaše, 4,20 eura po "decu").

Zatim smo uzeli juhu od kozica i juhu od gljiva, s tim da je ona od gljiva (neočekivano) nadmašila onu od kozica, koja mi je inače favorit. Gljive su se baš lijepo osjećale, a imale su i dašak arome po dimu. Lijepo je i što nisu škrtarili na repićima kozica u onoj prvoj, no žao mi je što je nisu malo bolje miješali jer se potkrala koja grudica. U ovom slučaju ne mogu uvažiti gužvu kao "skužu".

Rižot od škampi

Nakon juhe odlučili smo se za rižot od škampi i grdobinu u vinskom umaku, koja je, na preporuku konobara, stigla u pratnji s fužima. Rižot je bio jako ukusan, možda mrvicu previše al dente za moj ukus, no to je diskutabilno, a i grdobina je bila sasvim dobra. Porcije pristojne, ni oskudne, ni prevelike.

Desert nam nije bio u planu, ali kad je na obližnji stol pristigao sladoled pod kupolom od čokolade (pronaći ćete ga pod nazivom čokoladni Vezuv), koja se otapala pod toplim umakom, plan je ekspresno promijenjen. Ako ste od onih koji vole snimati hranu dok im se poslužuje, ovo je stavka koju nećete zaobići. U protivnom, naručite panacottu, jer premda nemam zamjerke po pitanju okusa, ovo je ipak sasvim običan sladoled s puno čokolade i (dosta finog) umaka od karamele.

Sve u svemu, ako ste do sada voljeli ići u Duje, samo nastavite. Ako niste imali taj običaj, slobodno ga usvojite. Što se tiče cijena, najskuplja je bila grdobina, 17,80 eura, ostalo je, osim rižota (11,30 eura) u prosjeku 4 eura. Vjerujem da Livaja zna puno o povoljnim transferima, no znaju i u Duji - kako sam doznala, jedan od uvjeta prilikom promjene vlasnika bio je da se ne mijenjaju ni osoblje, ni jelovnik, ni cijene. Izvrsna odluka.

Priznat ću vam na samom početku, na ovaj sam se novinarski zadatak uputila s blagom dozom zebnje. A zadatak je bio provjeriti kako pod novim vlasnicima "diše" jedan od mojih dražih restorana, restoran je Duje, koji je posljednjih 30 godina držala obitelj Matijašević.

Novi vlasnici su, ako vam je nekako promaklo, Iris i Marko Livaja. Bila je ura za ručak, točno dva popodne i mislite li slijediti moj primjer pa navratiti na Gripe u isti sat, odmah ću vam savjetovati: budite pametniji i zatražite rezervaciju. Slobodno mjesto sam jedva pronašla, ako ne računamo par stolova uz sam prozor koje je nesvakidašnji jesenski zvizdan učinio gotovo neupotrebljivima. Da, u restoranu je bila i Iris, ali Marko se nije ukazao. 

Osim veće popunjenosti primijetila sam i određene promjene u uređenju interijera, no ono što me najviše zanimalo odnosilo se na jelovnik i izvedbu ekipe iz kuhinje pa vam neću pisati o dekoru, no istaknut ću da se, za razliku od uređenja, osoblje nije mijenjalo pa me razveselilo vidjeti dobro poznatog i uvijek raspoloženog iskusnog konobara.

No da konačno prijeđem na stvar, odnosno - spizu. Za predjelo smo naručili jedno od omiljenih jela prilikom prethodnih posjeta, paštetu od škampi. Na prvi zalogaj bilo je jasno da recept nisu mijenjali, škampi su se sasvim pristojno osjetili, a pašteta je bila poznato kremasta, s dosta maslaca.

Malo razočaranje bio je nedostatak prepečenog kruha, za što se konobar unaprijed ispričao, a mi smo, s obzirom na gužvu, imali razumijevanja. Nažalost, baguette koji smo dobili kao zamjenu bio je malo žilav. No nije mi, kako se kaže, "zapeo za grlo", a u tome je pomogla ugodno pitka Kabola malvazija (na čaše, 4,20 eura po "decu").

Zatim smo uzeli juhu od kozica i juhu od gljiva, s tim da je ona od gljiva (neočekivano) nadmašila onu od kozica, koja mi je inače favorit. Gljive su se baš lijepo osjećale, a imale su i dašak arome po dimu. Lijepo je i što nisu škrtarili na repićima kozica u onoj prvoj, no žao mi je što je nisu malo bolje miješali jer se potkrala koja grudica. U ovom slučaju ne mogu uvažiti gužvu kao "skužu".

Nakon juhe odlučili smo se za rižot od škampi i grdobinu u vinskom umaku, koja je, na preporuku konobara, stigla u pratnji s fužima. Rižot je bio jako ukusan, možda mrvicu previše al dente za moj ukus, no to je diskutabilno, a i grdobina je bila sasvim dobra. Porcije pristojne, ni oskudne, ni prevelike.

Desert nam nije bio u planu, ali kad je na obližnji stol pristigao sladoled pod kupolom od čokolade (pronaći ćete ga pod nazivom čokoladni Vezuv), koja se otapala pod toplim umakom, plan je ekspresno promijenjen. Ako ste od onih koji vole snimati hranu dok im se poslužuje, ovo je stavka koju nećete zaobići. U protivnom, naručite panacottu, jer premda nemam zamjerke po pitanju okusa, ovo je ipak sasvim običan sladoled s puno čokolade i (dosta finog) umaka od karamele.

Sve u svemu, ako ste do sada voljeli ići u Duje, samo nastavite. Ako niste imali taj običaj, slobodno ga usvojite. Što se tiče cijena, najskuplja je bila grdobina, 17,80 eura, ostalo je, osim rižota (11,30 eura) u prosjeku 4 eura. Vjerujem da Livaja zna puno o povoljnim transferima, no znaju i u Duji - kako sam doznala, jedan od uvjeta prilikom promjene vlasnika bio je da se ne mijenjaju ni osoblje, ni jelovnik, ni cijene. Izvrsna odluka.
