Ušećereni bademi (bruštulani mjenduli) tradicionalni su dalmatinski desert, koji se na Badnjak, božićno jutro i na Uskrs poslužuje kao slatka grickalica, uobičajeno uz čašicu Prošeka. Poslužuju se i u ostalim svečanijim prigodama poput vjenčanja ili rođendana kao slastica ili kao sastavni dio ukrasnih aranžmana (ukrasne vrećice). Bruštulani su mjenduli prepoznatljivi suvenir dalmatinskog područja. Na području Županije nekoliko tvrtki bavi se suvenirskom proizvodnjom bruštulanih mjendula, podsjeća administrator FB Dubrovnik nekad Ivo Batričević.
Iako se radi o tradicijskom voću, proizvodnja bajama je na području Županije niska i nestabilna, što zbog tehnološki problema (ranocvatuće sorte), što zbog nezainteresiranosti lokalnog stanovništva (ekonomski razlozi). Zato proizvođači ušećerenih badema većinom koriste uvezeno voće.

SASTOJCI I PRIPREMA
Receptura je za pripremu ove slastice poznata i vrlo jednostavna. Osnovni su sastojci bademi, šećer i voda. Ušećereni bademi tradicijski se pripremaju ručno. Veći proizvođači više koriste strojeve za prženje badema. Za proizvodnju Dubrovačkih ušećerenih badema preuzeli smo recepturu po kojoj bademe pripremaju u udruzi DEŠA, također višestruko nagrađivanoj na natjecanju slastica u Dubrovniku.
Ključni su sastojak za burštulane mjendule jezgre badema. Jezgre badema za bruštulanje moraju biti čiste, zdrave, normalno razvijene i kompaktne, okusa i boje svojstvenih sorti, bez plijesni i truleži, bez vidljivih mana, užeglosti, stranih mirisa i okusa te polutvrde konzistencije. Badem mora potjecati s područja DNŽ-a ili ostalih dijelova Dalmacije.
Sastojci za bruštulane mjendule su:
20 dag badema
½ šalice vode
½ šalice šećera
Bademi se najprije malo zagriju u loncu na srednje jakoj vatri uz stalno miješanje. Potom se dodaju šećer i vodu te se smjesa dobro promiješa. Bademi se kuhaju dok se šećer ne otopi i voda ne ispari. Bademi i otopljeni šećer neprekidno se miješaju dok ne počne zgušnjavanje šećera. Postupak se prekida kad se čuje pucketanje. Na kraju se bademi prebace u limenu posudu i nekoliko puta protresu kako se ne bi zalijepili te ostave 15-ak minuta da se ohlade.

Ušećereni bademi (bruštulani mjenduli) tradicionalni su dalmatinski desert, koji se na Badnjak, božićno jutro i na Uskrs poslužuje kao slatka grickalica, uobičajeno uz čašicu Prošeka. Poslužuju se i u ostalim svečanijim prigodama poput vjenčanja ili rođendana kao slastica ili kao sastavni dio ukrasnih aranžmana (ukrasne vrećice). Bruštulani su mjenduli prepoznatljivi suvenir dalmatinskog područja. Na području Županije nekoliko tvrtki bavi se suvenirskom proizvodnjom bruštulanih mjendula, podsjeća administrator FB Dubrovnik nekad Ivo Batričević.
Iako se radi o tradicijskom voću, proizvodnja bajama je na području Županije niska i nestabilna, što zbog tehnološki problema (ranocvatuće sorte), što zbog nezainteresiranosti lokalnog stanovništva (ekonomski razlozi). Zato proizvođači ušećerenih badema većinom koriste uvezeno voće.

SASTOJCI I PRIPREMA
Receptura je za pripremu ove slastice poznata i vrlo jednostavna. Osnovni su sastojci bademi, šećer i voda. Ušećereni bademi tradicijski se pripremaju ručno. Veći proizvođači više koriste strojeve za prženje badema. Za proizvodnju Dubrovačkih ušećerenih badema preuzeli smo recepturu po kojoj bademe pripremaju u udruzi DEŠA, također višestruko nagrađivanoj na natjecanju slastica u Dubrovniku.
Ključni su sastojak za burštulane mjendule jezgre badema. Jezgre badema za bruštulanje moraju biti čiste, zdrave, normalno razvijene i kompaktne, okusa i boje svojstvenih sorti, bez plijesni i truleži, bez vidljivih mana, užeglosti, stranih mirisa i okusa te polutvrde konzistencije. Badem mora potjecati s područja DNŽ-a ili ostalih dijelova Dalmacije.
Sastojci za bruštulane mjendule su:
20 dag badema
½ šalice vode
½ šalice šećera
Bademi se najprije malo zagriju u loncu na srednje jakoj vatri uz stalno miješanje. Potom se dodaju šećer i vodu te se smjesa dobro promiješa. Bademi se kuhaju dok se šećer ne otopi i voda ne ispari. Bademi i otopljeni šećer neprekidno se miješaju dok ne počne zgušnjavanje šećera. Postupak se prekida kad se čuje pucketanje. Na kraju se bademi prebace u limenu posudu i nekoliko puta protresu kako se ne bi zalijepili te ostave 15-ak minuta da se ohlade.
